Boxing day food

Hi, I might be having a few people over (about 8-12 people) on boxing day and was hoping for some ideas of what to make for dinner. What do people normally have on boxing day? Thanks!

I normally cook a big ham! You can do it on Christmas Eve - I usually do the boiling bit then, and then roast it with a glaze on Boxing morning - loads of recipes on the BBC Good Food site. I serve this either with mashed potatoes, salads and pickles, or as part of a buffet style meal with quiches (which I do ahead and freeze), and "picky bits". Any leftover ham (don't normally have any!) can be sliced and frozen for packed lunches etc. Puddings, I often make a jelly (nice clementine one on said website) and maybe chocolate mousse - anything simple really that can be made ahead. Good luck!

Should probably say that I do have some ideas like making roast pork with potato dauphois (sorry about spelling) and making calcannon and some honey parsnips or something. Or I thought I could make Indian food but I'm not very experienced at that so could be risky. The best food I make is Italian but Italian doesn't seem very Boxing dayish if you know what I mean.

knottyhair - I do like the idea of making things ahead of time so i'll think about those ideas. I'm fine when it's my family here as they aren't at all fussy but in-laws are and they will be here too! When there are fussy people I can't relax and get all in a tither.

A nice easy salmon encroute. So easy to make and absolutely delicious! Just use frozen pastry, it takes no time at all to prepare. New spuds and a few veg. You could premark and freeze a cheese sauce.

I always like fish on boxing day, its much more refreshing.

bacon - ooh salmon, I love Salmon. I'll look up a recipe.
