A challenge: Something dairy free vegetarian that will keep well for picnic lunch on day 2 of camping? Oh, and it needs to appeal to children.

Maybe some sort of enclosed pastry thing? Like a long enclosed leek pastry plait? Umm...

I'll have the remnants of the breakfast fire to cook on if necessary, or ideally was hoping to find something I can cook before we go, wrap up tight and produce for lunch on day 2.

Maybe spinach pasties? But dd won't eat them. She is 4 and convinced that she doesn't like most things Hmm.

If it was something fairly child friendly that would be best.

Maybe... umm...

I'm drawing a blank.

Big Tupperware box of couscous, take a jar of mixed tomatoes and artichokes in oil to pour over.

Spanish omelette (tortilla) ie made with eggs, potatoes, onions and tomato (optional). Keeps brilliantly for a couple days wrapped in foil. Slices well and is filling.

how about farrinata?

It's an italian thing, like a thick baked pancake made of gram flour, flavoured with cumin and olive oil and with whatever veg you want through it.

It keeps brilliantly and is great cut in to wedges with child friendly dips etc. Texture comes out like a cross between spanish omlette and, erm, a scotch pancake. But contains no dairy or egg. Is cheep, protieny and travels well!

I am the farrinata marketing board! Can post recipie (from cranks book) if you're interested.

Please tell me you're not in the uk...

No, it is a balmy 28 degrees here.

Farrinata sounds exactly what I am looking for. Perfect! Shall I google a recipe or do you have a failsafe one?

Any recommendations on the veg to put in?

I haven't tried with other flours but imagine it might work...no gluten in gram is there?

Veg like pre roasted aubergine, toms, peppers etc all work (maybe even the antipasti jars?)

I put in red onion, cumin and thyme. Everyone loved it. Yum. Thank you!
