Straightforward Fudge recipes please!

Hoping to deluge friends and relatives with pretty bags of cheap delicious home made fudge this Christmas. Tried a Caramac/Icing Sugar based version & it was certainly v v quick, but not the right texture.

Anyone got any suggestions?

THE best one I make...and I'm making it for little 'extra' pressies this year is:

250g dark choc
100g milk choc
350g condensed milk
1tsp vanilla extract

you are meant to also add chopped pistachios but I added choc chips etc. The nuts would look so pretty.

line a 15cm x 23cm tin with parchment

melt the choc and milk in a bowl over barely simmering water until melted

beat together until glossy adding the vanilla

pour into the tin and chill for at leat three hours. Makes approx 50 pieces and was demolished by my family this weekend so I'm making more today!

Have made this a few times - Nigella's fudge. I tend to ditch the pistachios though, in favour of other nuts, or dried cranberries, or sour cherries - anything really. I use the cheapest dark chocolate in the supermarket or Lidl's if I can get there.

plain vanilla tho, if anyone has any recipes that are tried and tested :)

Vailla fudge

850g sugar
30ml milk
125g butter

Vanilla essence

Enough for a 7" square tin

Butter the tin

Put the butter, sugar and milk in a pan and heat until all the sugar has dissolved, stirring. Boil, still stirring, until a little dropped into cold water forms a soft ball.

Remove from the heat and add the vanilla essence.

Now depending whether you want a)hard crunchy fudge or b)fudge with a creamier texture

a - beat until the mixture dropping from the spoon into the pan forms a thick ribbon that takes a little while to sink back into the mixure. Turn into the tin, smooth and mark into squares.

Allow to cool until the teperature has dropped to 50deg C. Beat as above and then pour into tin.
