Best thing to grease bun tins

Just made some mince pies and, despite copious greasing of tins, most have stuck and those that haven't look pretty ropey.

My mum used to turn out dozens - quick whip round with knife to loosen and out they popped. It can't be the tins because I've inherited hers, so where am I going wrong? What should I use to grease them with???

What were you using? Lard is the best for non-stickability, despite general grossness - I tend to use butter but there is a higher risk of sticking with it.

I use Cake Release from Lakeland.

You could also use fairy cake liners.

were the tins once non stick, and now... just stick??

I ususally just use melted butter. you could paint with butter then sprinkle with flour...

have heard cake release is amazing too. You can get a white veg fat version of lard - atora or white flora, so you could use that too!

oh another point - did you roll your pastry too thin/not seal the lids on with milk and did the mincemeat leak out? That will always cause them to stick as well IME I believe.

thanks. Was using block stork rather than proper butter. Also pastry may be a bit too thin. Will try again tomorrow.

oh yeah - thats definitely a sticking risk - leaking mincemeat!
