Goose for Christmas

I am considering goose for Christmas but we haven't tried it before.
Is it an acquired taste? Do your DC like it?
Any stuffing ideas?

There is a lovely recipe for goose on the mumsnet recipes section. I have used it for the last 2 christmas(s) with great success.

It is absolutely gorgeous, I only have the one dd, but she loved it. (Caveat, she's not generally fussy and if something is presented as 'special' then she tends to like it regardless.)

Bloody expensive though, especially if you want to buy local and doesn't go so far (don't have leftovers like turkey).

Mind you that is partly cos none of us like turkey that much so I suppose the goose is better value really!

It's quite a rich meat so I found the DDs don't eat a lot of it, but they do like it.

Be prepared to drain off fat from it every hour or so during cooking time though, which can be a bind on Christmas Day (though does give you delicious roast potatoes for the next year - mmmmm!).

My son loves it (from 3yrs old). It is a rich meat and hence you dont need to much meat on your plate.

Having raised geese they are mass eaters and take specialist slaughter and dressing plus the cost of them at day olds is considerable. I sold mine far too cheap £38 each but assume most are £40 - £70. Goodmans geese are great at raising geese and have good cooking tips. You can source them at farmgate much cheaper. The frozen ones in the supermarket freezer cant be up too much at the price.

No no no stuffing as far too fatty. You have to do this seperatley. The fat is superb and lasts forever.

Fab bird alive and on the plate. Yummy!

you need to get a free range bird, as the others have too much fat.
much more delicious than turkey, I think, a bit like duck, maybe a bit more gamey. easier to cook than turkey as well as the meat doesn't dry out due to the fat.

oh by far the best festive bird going! I have it every year. Use the fat you collect during cooking to do the roasties. Deeeeeeelicious.

Goose is very expensive though. I usually eke it out with something else as there are usually loads of us...

AAARRRGGGH - it's gone!! I hope I can find it I think I printed it off, but that was 2 years ago.....
