Bored, bored, bored with mealtimes.
Prep is limited due to arsenic hour.
Vegetarian with 6yr old and 18mth old.
Tonight I really cheated as DH was out of town and did baked spud with slaw and cheese...yawn!!!
So what's on your menu, inspire me please.

Tonight we are having Butternut squash risotto with parmesan. I'm adding some crisp bacon but you can leave that out.

I also make a veggie pasta sauce, I bung the veg (onion, garlic, pepper, courgette, mushrooms) in the magimix and chop them small then in a pan with 2 cans of chopped toms, some herbs and tom puree. Cook right down then season. Serve with pasta and cheese. You can chop the veg in the morn and cling film it then use when you are ready.

Quiche, oven chips and beans is a cheat dinner we all love in this house!

yum love risotto but a bit rubbish at making it.
Often do pasta similar to yours but ds definately not a pasta fan though dd is.
DS also does not do quiche but will eat frittata which I haven't made in a while.

This is lovely www.bbcgoodfood.com/recipes/4382/veggie-shepherds-pie-with-sweet-potato-mash. Can be frozen as well, so you could do double to save time on another night. I've done it with just normal mash or any root veggies.

I also like to make a roasted veg lasagne. I think it was a delia recipe but I now just make it up as I go. Its pretty simple.

DD loves a kind of Minestrone I make too, just onion, carrot, celery, pepper all fried off, add some passata and some stock allow the veg to cook then ass some tiny pieces of pasta, herbs and seasoning. Yum. I have used rice too when absence of mind makes me forget to replace the empty pasta pot!!

We are having www.bbcgoodfood.com/recipes/725645/refried-bean-quesadillas tonight which are a variation of bean fajitas which we also have quite often.

Would DCs eat a mild curry? We often havedhal or chickpea, potato and spinach.

courgette lasagne- also on goodfood website- is yummy and not at all labour intensive for a lasagne

Ooh yes, I forgot about the black bean chilli on the Good Food website - not really spicy but DS loves it with wraps and all the bits & pieces. You don't have to use black beans, any tinned ones would be fine. Another one you can make extra for and freeze for a really quick meal another night.

A couple of veggie meals that my two like and that are also acceptable to adults are:

falafel and salad in pitta bread with minty yoghurt (often do a little bowl of chopped red chilli and coriander too);

Spanish omelette and salad;

chickpea and vege curry (I sometimes cheat and use a jar of Tikka Masala sauce or paste, which my barbarian daughterc laim to like better than my homemade one);

soup, bread, cheese and a hot fruit pudding - favourite soups include leek and potato, lentil with spices and coconut milk, vege and pearl barley;

Nigella's lentil chilli with rice and cheese and soured cream (and tortillas and guacamole if I can be bothered).

so far out of your suggestions...
vege shep pie (I do a bean bake which the dc love so this should go down well too.)
bean quisadillas would also be a hit (love wraps in this house and often make bean burger patties to go in them so this would be a refreshing change)
both kids love curry and will eat dahl and chickpea versions so will put a couple of varieties on the menus.
Falafel and Soup often on the menu here
Will try Spanish Omelette and Chilli
Thanks getting enthusiastic about dinner tonight. May go for the omelette and salad as is another gorgeous day.

Ooooh, vegetable tagine with apricots and almonds (there's a recipe on the Waitrose website), yum, yum, yum!
Also, lovely but simple spaghetti with parmesan, peas and broccoli- cook the spaghetti, adding the broccoli and peas at the end and take out a cup of the water. Melt 2 tbsp of butter in a pan and add the pasta, a load of grated parmesan and a couple of tbsp of the pasta water- it all makes a silky sauce. Very quick and easy. I sometimes make it the same way but just mix the pasta with philadelphia instead of the parmesan. Less grown up but still nice.
Sounds very 80's but I love courgette and lancashire cheese crumble, I think it was originally a Nigel Slater recipe. Cook down 3 courgettes and mix with cooked onions, crumbled lancashire cheese, seasoning and rosemary. pile in the bottom of a dish and top with breadcrumbs, walnuts and more cheese all whizzed together in the processor.

yum jeffily, haven't tried any of those...will look at waitrose website. Pasta sounds scrummy and right up dd's alley (ds will most likely eat it as it doesn't have a tomato based sauce) I like the sound of the courgettes not sure I will sell the kids but yum scrum worth a try.
