DP is apparently fond of them. I said I'll make them in the pm Hmm

Lots of recipes on the net, so can't decide. What's the difference between rolled and chopped oats? Can I use butter instead of margarine?

I've got Quaker Oats and some cheaper ones too.

Would like them to be chewy rather than crisp.

Can't remember exact recipe i used, just first one that google came up with... But try putting a layer of uncooked apple (just sliced up) in the middle - so lush.

300g Butter
340g demerara sugar
4 heaped tbsps golden syrup
1/2 tin of condensed milk
500g rolled oats can be cheap ones.

Preheat oven to 160C

Line a baking sheet (swiss roll tin is ideal) with baking parchment - doesn't need to be neat, or even greased as long as you use parchment. Put sugar, butter and syrup into a pan over a medium heat, stirring constantly to stop it catching. Make sure butter is melted, but don't worry if the mixture is separated.

Take pan off the heat, pour in condensed milk. Stir until combined. Stir in rolled oats.

Empty mixture into lined baking tin - roughly distribute it evenly - it levels out pretty well if roughly in the right place - certainly no need to press it down.

Put in the middle of the oven for 10-15 minutes or until lightly golden brown. Allow to cool in the tin. Cut into pieces.

They'll keep for a few days I think, not sure as they don't last long in this house!

I haven't got demarara sugar, just caster and cane.

Got a big can of golden syrup.

No condensed milk.

Can I still do it?

um, should still be able to make flapjacks, just not those ones :)

I'm sure Google will have a recipe that fits the ingredients you have.

I made some yesterday
125g butter
100g brown sugar
4 tbspn golden syrup
250g oats
40g sultanas or raisins

melt butter, sugar and syrup on a low heat
chuck in oats and raisins
stir
put in tray 2-3 cm thick
cook for 30 mins or until golden
cut into squares
cool

I made them, used just a bit less sugar than in theagedparents recipe and caster sugar instead of brown.

They're good, although horribly sweet! And a bit dry and crumbly.

If dry and crumbly, next time cook for less time and use more butter. I use less sugar and put in dried apricots. Press down reeeeeeeeeallllllly hard before you put in oven to make sure you don't end up with muesli.

Very good, itisntreallyme - tried your Delia rec plus the lemon juice, the family have devoured half of it already! Its a much stickier and less crumbly flapjack than we are used to.( all that butter! )

Well, I did Delia's recipe today and it was lovely on top and greasy muesli on the bottom- didn't stick together, so unable to cut it in pieces.

Followed the recipe so no clue where I went wrong.

winny - I wonder if it was your oven temp? It sounds like it may have needed a bit longer? Its quite a low temp for quite a long time, compared with other flapjacks.

Well, I left it for 40 minutes at 150 degrees- exactly what the recipe said.

Oven is relatively new, works fine.

Use LittleFish's recipe from here. It's REALLY good for chewy flapjacks.

8oz butter
8oz oats
8 oz sugar (I use 4oz)
2 oz golden syrup
4 oz flour
pinch of salt
2 pinch bicarbonate of soda
2 tablespoons of water

Melt the butter, water and sytrup together

Add the dry ingredients.

Stir

Add fruit/nuts/choc chips etc, if you want.

cook at 150 degrees for about 35-40 minutes.

They are absolutely delicious, and the flour seems to ensure that they stay chewey, rather than crumbly or rock hard!

I did the Delia one and made 16 little fairy cake sized ones and they were lovely. Made them with gluten free oats for the dds, and have to carb count for diabetic dd1 - so to let you know if you make 16 they are 15.5 grams of carb per flapjack.

I would like to add some fresh cranberries to my flapjacks, as I have some here, but all the recipes say to use dried cranberries. Do you think it would be ok to use fresh, and should I do anything to them to prepare them?

Fresh cranberries will probably go bit squidgy in flapjacks. Plus they're more sour than other berries. The dried ones are sweeter.

put 1 pack of butter, 4 ounces of soft brown sugar, 4ounces of golden syrup in a bowl and microwave until butter has all melted (stir a couple of times) then stir in 1 pound of oats and a handfull of raisins. spread out and firmly press down on to a swiss roll size baking tray lined with greasproof paper. bake for 20-25 minutes on middle shelf - remove from oven when edges of flapjack turn golden and slightly hard.
