help with evening meals PLEASE

we seem to only have 5 recycled meals during the week, and I need new ideas for dinners.
My girls are very picky but tbh I will try anything.
We already have:
Pesto and pasta with chicken
Korma
Sunday roast
stirfry
sauage, veg and chips.

please help us, I especially need more veg meals.

risotto.(we regularly have lemon and rosemary, or green veg, or squash of some type)

puff pastry, rolled out, topped with pesto, tomatoes, red peppers, mushrooms, courgette and a little mozarella

soup/stew and dumplings

chilli (meat or veg) and rice

have slight problem that DD1 wont eat cheese in any form :(
chilli we do now and then
and DD1 wont eat stew or soup.

love risotto, do you have a good way of making it?

Jacket potatoes with various toppings
Cottage pie
Fish pie
Sausage, mash and gravy (would make a change from chips every now and then)

sorry just realised you said meals with more veg!

You can hide veggies in your tomato sauce to have with pasta - make a big batch and freeze it!

Sweet potatoe wedges go down well as a change from chips too

Risotto -

Fry onions in good amount of olive oil/butter until soft
Add rice and stir to fully coat in oil - this is important to bring out starch
Pour in a glass of white wine - if you don't want to use wine, stock will do, but wine is better
Add a ladlefull or 2 of hot stock and stir - repeat this every couple of minutes for about 20 mins until rice cooked
Add a good handful of parmesan and butter - this is very important to get a creamy texture

That just makes a plain risotto and then add to that whatever flavours you want, my favourite is leftover spagbol sauce stirred in to heat through at the end, yum

ahh well that's ok as i have a dairy intolerant child so used to working round that!

if i do homemade pizza i do a vegan one with homemade pesto (normally it has parmesan in) and mixed veg on top. yum

cous cous and veg and just leave the cheese out of her portion

ditto the puff pastry tart.

does she not eat any cheese at all? ds1 is sometimes funny about it, but LOVES mozarella which doesn't really taste cheesy

DS1 thinks he doesnt eat cheese either!

I sprinkle it over frittata and he gobbles it up!

thanks, its so hard to find things that work, DD1 is Autistic and new foods are a real PITA but I need to keep trying.

easy malaysian noodles (chicken/quorn, thai curry paste, stock, coconut milk, bag stir fry veg)

roast veg pasta
tabbouleh
pasta salad
rice salad
vegan pizza with tomato sauce and then veg toppings
scrambled tofu with onions, mushrooms, tomatoes and peppers on toast
stuffed portobello mushrooms
portobello mushroom burgers (just th mushrooms, roasted with garlic and olive oil and then used instead of a meat burger in a bun with salad etc.)
lentil curry
honey baked lentils with carrots, onions and peppers in, served over rice.
wraps
broccoli mushroom rice
rustic shortcrust tart (just make some kind of thick pie filling, pile it on top of a sheet of shortcrust and fold up the edges.) Mine like tuna with peas and onions in a very thick white or mushroom sauce and chopped, cooked chicken in a tin of creamed corn and condensed chicken soup.
potato topped veg pie
butternut squash wedges
swede chips ( peel, cut into chip shapes, toss in olive oil and parmesan/nutritional yeast flakes and roast.)

Lisa, I have 3 Aspergers kids and I thought that they were never going to eat anything. DS2 lived for over 2 years on sausage rolls, pancakes and peanut butter, frosted shreddies and apple juice and absolutely NOTHING else.

I promise that it does get better. DS2 will now eat all of the above except the pasta/rice/couscous salads and the swede chips.He even eats stew and soup now, which he never did when he was younger. You just have to take it very slowly and keep at it. We used to do things like pretend the shepherd's pie was Dragon pie, steak was snake, pizza was Red Ranger food Blush It worked eventually.

How about roasted veg penne? An easy one and you can use any veggies that you like/will roast well?

I would roast:

2 peppers (one red/one yellow), cut into quarters
a large onion, cut into about 4 or 5 thick slices
a couple of courgettes, cut into rectangular quarters (i.e. lengthways, rather than into rounds)
a couple of carrots, also cut into rectangular quarters

If you like, you can also add a chilli (roughly chopped), and some cloves of garlic - unpeeled. Tomatoes work well, but only take half the cooking time.

Put all this into a roasting tin, season with salt and pepper and a good drizzle of olive oil, then bake for 40 minutes in a hot oven.

Check them after 20 minutes, and stir to make sure that they aren't sticking/burning.

Cook your penne and then stir in however much veg you want (you may have some left over) and then grate some parmesan (for those who like cheese!) on top. Make sure there's plenty of the olive oil from the veg to coat the pasta.

And this week, I did the same roasted veg, but also added some new potatoes and a packet of sausages - which I had browned first. Made a lovely main meal with some crusty bread and green beans.
