i am going to attemp a pudding this year. can you please tell me if you know any decent recipes.

and if you can't get hold of barley wine use the equivalent amount of guinness

Yes, definately Delia. Her recipe makes two, and this year is Pudding 2 Year - it will be amazing.

go and look on christmas pudding ingredient packets in the supermarket. i bought packets of mixed dried fruit in the coop and i thought the recipe on the side of the packet was very simple and straightforward.

i started off with delia's recipe this year but actually couldn't make head or tail of it, she is just too wordy for me.

youtube has excellent clips of people icing christmas cakes too, much easier than trying to work it out from a book.

Most supermarkets do Barley Wine. It's actually a beer - comes in mini gold coloured cans and tastes disgusting - but sold in packs of four and you only need one, so Guinness is probably a good substitute.

I use a recipe from an Atora booklet from before 1950, there is a recipe on their website, but don't know if it is the same.

Here it is:

225g Atora
480g raisins
240g currants
240g sultanas
120g candied peel
180g sugar
180g sr flour (or plain + 1 tsp baking powder)
30g almonds chopped - I use ground
rind and juice of 1 lemon
240g fresh breadcrumbs
1/4 grated nutmeg
4-5 tbsp rum

Mix all together thoroughly and the put into 4 greased 1 lb pudding basins. Cover with greaseproof paper and foil. Or you could use the plastic basins that have clip-on lids. Steam for 6-8 hours. Remove wet papers and replace with fresh ones. Steam for 2-4 hours on Christmas Day.

My great aunt made the pudding for years, and, after she died I was handed the Atora recipe book. The breadcrumbs make it not too heavy. I use 2x 2lb basins, but, if you can get them, the plastic ones with the lids are better.
