Meals to use up eggs?

I have a lot of eggs to use up and want to use them in main meals rather than baking as I am watching my weight.

All I can think of are omelettes and frittata.

Does anyone have any more substantial suggestions?

spaghetti carbonara? (nice recipe on BBC good food website uses three eggs)

Jamie Oliver's fish pie is gorgeous and uses a couple of eggs (google the naked chef version, not the ministry of food version which doesn't)

Pancakes?

Boiled egg and cress sandwiches?

nicoise salad?

How about a souffle? I make a great pea souffle which is a bit like this only using frozen peas. More of a savory pudding really, as it doesn't rise mile high, but great for lunch with salad and a slice of bread and butter.

How about egg fried rice, egg and lentil curry and tortilla.

I have a close Spanish friend who gives the recipe for tortilla like this.

Large potatoes, sliced to cover the bottom of a pan.

6 eggs beaten and seasoned.

Oil.

Place oil in a medium to large pan.

Heat gently and add the potatoes so that they cover the bottom of the pan.

Gentle fry the potatoes till half done, then flip them and continue cooking on the other side until cooked through.

Beat eggs and seasoning in a large basin and tip in the potatoes.

Turn up the heat under the pan and when it's good and hot pour in the egg and potato mixture.

When it's brown but not burnt on one side take it off the heat.

Take a plate, hold it against the pan and slide out the tortilla.

Now slide it back in the pan (hopefully in one piece) and continue to cook until done.

She is adamant that there are no other ingredients in a 'proper' tortilla, no onion, no peas, nada.

Egg curry. Boil eggs and cool. Fry the egss in some oil so they brown all over. Add them to curry sauce you have either made earlier or a jarred sauce. We used to have this when there was nothing left in the house to eat and is delish. If you like curry that is Grin.

Thank you for all these suggestions. I think egg fried rice and carbonara will do nicely.

Could murder an egg mayonnaise and cress sandwich now, might have to do that for lunch tomorrow.

Cook some pasta. Then mix the pasta ( while hot )in a bowl with hard boiled eggs, tuna and grated cheese. My kids love this meal. We have it as a quick and easy comfort meal on a saturday when the weather is really bad outside.
< If OH and I are feeling really naughty we eat it straight out of the bowl we've mixed it in. >

I like to put them on pizzas - make a pizza base (or buy one!), put the tomato puree on then put on some wilted spinach and cheese (you can use cheese sparingly and it'll still taste nice), so that you have got 2 or 3 gaps (you kind of have to build up the edges with the spinach). then break an egg into each little gap.
sprinkle some mixed herbs on top and bake as normal.

The eggs are then baked eggs and the yolks will be soft and fluffy.

Eggs mornay - lovely, but not so good if you're watching your weight, really!

Hard boiled eggs, halved, placed cut side down in an oven-proof dish. (2 eggs per person, probably).

Cover with cheese sauce, sprinkle grated cheese on top and then some sliced tomatoes, and bake in the oven until the cheese is bubbling and golden brown.

Stuffed eggs (good as part of a salad)

Hard boil eggs. Shell, cut in half and scoop yolk out into a small basin. Mash them, and add a dessertspoonful of mango chutney, a good shake of curry powder, a generous dollop of mayonnaise and season with salt and pepper. Mash together and then fill the cavities of the eggs with this mixture.

Sprinkle with cayenne pepper.

break a couple of eggs into a gratain dish, place lots of sliced cheese around the yolks, pop in oven until cheese bubbles and eggs are cooked. serve with lots of bread and butter and brown sauce. yummy!!!!

Clafoutis- a quiche really
Fry chopped bacon, onions in a pan. Add cherry tomatoes and a good handful of watercress and heat gently for about a min.
Put into a dish for oven. Mix 4 eggs, 3oz flour, 3/4 pint milk. Season & pour over bacon mix. Sprinkle grated cheese over the top and bit of paprika. Cook for 20mins till firm/golden

Baked eggs?

Layer cooked spinach, bacon/ham/turkey bacon, and even some butter beans in ramekins, then crack an egg on top and top with a sprinkling of cheese (could use low fat or a bit of cream cheese) and bake till the egg is set. Nice with some bread and salad. Not very high cal if you went easy on the cheese/bacon bit I don't think...
