What 'yummies' do you always make / are going to make for Christmas?

I've done christmas pud, mincemeat and about to do cake - all delia's (will they all taste the same i wonder?!!)

I'd like to make some special things that I can take as tokens when we go to other people's houses over the festive period.

Ohhhh so gorgeous, ppeatfruit. I am hoping that I have been good enough this year that I will find him in my stocking on Christmas morning.

And I will try the lemon cake soon - it sounds gorgeous!

BTW - I have copied the recipe into my file and could post it as one post here, if you'd like me to.

I can't believe i left the eggs out of the ingredients list in my defence it's annoying 'cos i can't post more than 3 or sometimes 4 lines. Even DH had a go at the computer.

Lemon and almond cake

1 large org. lemon,
Half a pound almonds
Half a pound of sugar
6 eggs
1 tsp. baking powder
Almond oil
Flour for tin.

METHOD. boil whole lemon for 1 - 2 hrs. cut to remove pips when cooled then liquidise.
Separate eggs and beat yolks till creamy.
Eggs and sugar beaten (sorry) then whisk whites and add with lemon and baking powder.
Prepare flan tin and bake at 200c for approx 1 hr.
This is a moist cake but you can leave in oven for longer if you think it too wet. Let it cool in the tin. this is based on Claudia Roden's recipe(she uses oranges).

Dim questions - by 'half a pound of almonds' do you mean ground almonds?

Almond oil - do you mean essence?

It's not my recipe, but I am pretty sure that the almonds are ground, and the almond oil is used to grease the cake tin.

This year I'm making cranberry and orange vodka. There is a recipe for it on the delicious magazine website. Very festive looking.

Cranberry and orange vodka recipe
By Debbie Major

Serving instructions
Makes 2 x 500ml or 4 x 250ml bottles

Takes 15 minutes to make, plus maturation

The cranberries give this vodka a brilliant ruby colour that looks so Christmassy. It?s best served straight from the freezer. It needs 2 weeks before it can be bottled, 1 month before it can be drunk and will keep in the freezer almost indefinitely. Give as a home-made gift.

Ingredients
250g fresh or frozen cranberries
Pared zest of 2 oranges
175-200g caster sugar, to taste
1 litre unbranded vodka
Method

  1. Put the cranberries into a shallow dish and stab them with a fork, but don?t reduce to a mush. Put them into 2 sterilised, wide-necked jars with lids, with the strips of orange zest and the sugar. Pour over the vodka, seal and leave somewhere dark for 2 weeks, shaking the jar now and then (about once a week), until the sugar has dissolved.
  2. Strain the liquid through a muslin- lined sieve into a jug, decant into sterilised bottles, seal and label.

Re reading my recipe i need to add that the beating of the eggs yolks and sugar is v. important it must be thick and creamy before adding the rest of ingredients.
