Doing my online order - what can we eat?

Two adults and two teens - needs to be veggie.

I am so bored of everything/ Also, it needs to be really quick and easy to prepare after work OR idiot proof so that dp can do it.

So far I have:

roasted root vege, with veggie sausages and yorkshire pudding

chickpea and paneer veggie curry and rice

pasta arrabiatta

Frozen ready rolled puff pastry. Thawed while out for the day. Get home, unroll, score a line an inch from the edge all the way round. Top with halved cheery toms, crumbled goats cheese and olives. Bake for about 30 mins.

Brilliant -

Spanish omellette deffo.
We haven't had lentil soup for ages either.
I love mushroom strogonoff but the girls are mushroom-haters.
I do risotto a lot but it is something we all like, so I guess we'll just have to have it again.
Usually have the makings of a chilli in the house too.

Tortilla/omelette type thing
Feta and spinach filo pie
pizza
mushroom stroganoff
pasta genovese- pasta, pesto, green beans and pots.

Badger - how do you do your feta pie please? I wonder if I could use leeks instead of spinach?

I've never done pasta Genovese as it seems so carb-heavy. Is it nice?

we often do similar. puff pastry, roll it out (or buy ready rolled!)
spread with pesto (i make my own, but you can buy if you like) then top with whatever you like.
we usually do tomatoes, mushrooms, courgette, red pepper, and occassionally mozarella

I like the pasta genovese but it's as good without the potatoes- or try brocolli, pesto and cherry toms (gently cooked)- that's nice too.

ACtually - scrap that last one as I've just seen you don't like cooked toms.

That looks brilliant - and stupidly easy! I could just saute the leeks and mix them with the cheese etc, leaving out the demon-tomatoes.

Fry onions slowly for 30 mins ( can do ahead and then warm through ) in butter, put on puff pastry scored with border, add chopped thyme and cheese bits of choice ( I have used camembert and taleggio - a softish one is good ).

I have an amazing spicy BNS soup recipe if you're interested. Serve with parmesan cheese straws - grate parmesan into puff and then slice into strips and twist. A pinch of cayenne is good too.

Nige's pumpkin Thai curry is good.

Both the soup and the curry are better the next day.

Jarred roasted peppers and feta cheese instead of the cheery Grin toms and goats cheese? Or halloumi? Or mozzarella for a pizza style tart.

I have got Nigel's recipe I think but haven't made it - I think we'd all like that.

Bns soup sounds good but sadly my food processor has died, so I can only make un-blitzed soups at the moment. The parmesan twist things sound great too.

The BNS soup recipe says you can either blitz or not - I always have but am sure it would be delish anyway. Halve and deseed the BNS and roast drizzled in oil in hot oven for 40 mins.

Fry 2-3 onions and a couple of finely chopped garlic cloves in oil slowly until soft but not coloured. Dry fry teaspoon each of caraway, cumin and coriander seed for a couple of mins then crush with pestle and mortar and add a teaspoon cayenne.

Scoop cooked BNS out of skin ( if not blitzing, maybe scoop/cut in small bits )add to onion/garlic, add spices and enough veg stock to get the consistency you like.

You can add a tablespoon or two of creme fraiche but it doesn't really need it.

Sorry - I shouldhave said that I don't like aubergines or cooked spinach. Fussy veggie pain in the neck emoticon required here. :)

I usually do Nigella's veggie chilli recipe, which is v good.
