Pumpkin recipies please!

As it's nearly halloween.

Esp. pumpkin pie but any ideas welcome.

I read somewhere that you can use grated pumpkin in cake in the same way as you would use carrot.
ie - make a carrot cake, but substitute carrot for pumpkin.

Yes you can.

Also - dice finely, fry in butter till brown, chuck lots of chopped garlic and sage at last minute, season and serve.

Have also made pumpkin pie, icecream. So not worth it!

Need to try curry soon. I'm thinking thai style.

I made pumpkin stew once from a halloween pumpkin and it was vile!! I have since read that these pumpkin aren't the best eating varieties, grown for the halloween market. BUT I have heard of loads of people cooking with them with success. So opinions please.. do I just not like pumpkin or are halloween pumpkins just not nice?

We had pumpkin in Australia in the summer (ours, not theirs) which was very simple. Cut the top off and scrape out the seeds, then fill with a mixture of Apple and Onion. Bake.

I don't know how long for, but I would guess for about an hour on Gas 4 or 5. It was a delicious vegetable dish to go with almost anything.

Mixed with some squashes they make a warming Thai-style spicy soup

1 14-ounce tin of coconut milk
Red Thai curry paste OR crushed dried chilli and some grated ginger root
water
sea salt to taste

Peel and chop it all up. Bung it all in saucepan, whizz it up when cooked, then serve. If you are really clever hollow out a spare pumpkin to serve it in.

The seeds are very yummy roasted and mixed with Maldon sea salt.
