Anyone got any good, foolproof soup recipes?

Think I'll give it a go for the winter.

It is really nice, a bit fiddly, but not rocket science, and well worth the effort.

Nice thai-ish one:

lemongrass, ginger, soy, coriander, coconut milk, garlic, spring onion, lime juice, chilie. Chicken stock, chicken bits and lots of water. Just boil it all up together and let it reduce a bit. It's easy and delicious. You can chuck some noodles in it to make it more of a meal as well.

Cream of broccoli n stilton (or cheddar which ever you prefer)

1 onion, chopped
knob of butter
1 Bunch of Broccoli
1 pt cream
0.5b pt milk
1 teaspoon of that nice sprinkle in veg stock from knorr (or just normal veg bouillion but takes longer to melt in)
1 lump cheese

Lightly sautee onion in butter for a few mins to soften the onion, (try not to burn)
Chuck in cream and milk, then add stock and stir
Finely chop broccoli (or blend it) and add to pan.
Bring to boil, should thicken as you stir, but you can use cornflour if you like

Pour into bowls and grate cheese of choice on top, serve with nice warm roll, yummy!

For Mushroom, simply add these instead of broccoli!

MMMM this may sound boring but its gorgeous and dead easy.
A load of butternut squash and a sweet potato boiled in chicken (or whatever) stock, season and chuck in any fresh herbs if you have them/want them, then blend. Gorgeous!

Just remembered another one, very low GI as well.

Sweet potato, spring onion, red pepper, swizzle it all around in bit of vegetable or sunflower oil, then add ginger, soy, garlic, tomatoes, tomato puree, chillie and water and let it reduce. You can also add kidney beans at the end. Plus sprinkle with coriander leaves.

Very nice, but won't keep longer than about a day.

MMM, I'm loving these, off to buy a new blender soon, my old one seems to have gone missing from mum n dad's loft so haven't tried yet, but keep em coming! I'll let you know when I've tried them!

did one for lunch which is actually Annabel Karmel's Lovely Lentils souped up!

lentils,

bay leaf,
stock

Carrot soup:-

1tbsp butter
1 stick celery, sliced
1 small onion, chopped
100ml white wine
4 large carrots, chopped
1 pint vegetable stock
Salt & pepper to taste
Single cream

Melt butter in a large saucepan. Sweat celery & onions until softened. Add white wine & simmer for 5 mins. Add carrots & gently fry for 5 mins. Add stock. Cover & simmer for 15-20 mins.
Allow to cool. Blitz in a blender until smooth (or use hand blender). Reheat, seasnon & add a swirl of cream & serve.
You can also add 1/2 inch of grated ginger when you chuck the carrots in for a bit of 'zing' - or a handful of chopped coriander.

nigel slater's mushroom soup is lovely - fry lots of mushrooms in butter and garlic, then add a glass of white wine, some stock and single cream before blitzing
