URGENT!!! Cake decoration advice needed!

Right - have just been asked by really lovely neighbour if I'll make a cake for her husband's birthday - she really admired the ones I'd made for dd and ds, so it's very flattering to be asked. They're also really kind and very DIY handy, which we're not, so it's nice to be able to return the favour.

However: the birthday is on Sunday, and we're heading down south tomorrow, so I have a very short time in which to do it. I can make the cake today - Madeira, probably? Although Nigella's jam cake is a bit of a never fail for me these days. But the problem is how long the icing would last. He's built a new extension to their house, and she'd like it to look like that, which is fine. I'd thought a buttercream or fudge icing would be quick and work well as "render" with fondant icing windowframes, roof tiles, etc. But if I ice it tonight, or, at the very latest, tomorrow, will it survive til Sunday? Or would I be better covering the whole thing in fondant? I'm a bit disinclined to do that, as I think fondant tastes horrible, but it might be the best move.

Any advice most welcome.

The cake will survive, but I can't be sure about the icing. It should be OK I would have thought, but cannot be sure.

I'd be inclined to make royal icing and colour it, I know butter cream is OK in the fridge for a few days, but can go fairly solid.

Argh. Too scared of royal icing. Think fondant might have to do.

Oh! Could I freeze it and get her to keep it in her freezer and defrost it herself, do you think?

the cake will be fine if you store it in a cardboard cake box

HabbiBOOOO · 20/10/2010 12:44

where would I get one of those?

any cakedec suppliers/shops or failing that a craft shop

bythepowerofMN · 20/10/2010 13:07

yes storing in a cardboard cake box would do the trick...good luck!

HabbiBOOOO · 20/10/2010 15:26

no such shops nearby, unfortunately. Think I'll freeze it. Thanks, all.

I don't think you can freeze it with fondant icing on.

Could you give it to them tomorrow and then they could find a way of keeping it fresh?!

HabbiBOOOO · 20/10/2010 15:42

no, decided not fondant, as itr just doesn't taste nice - fudge frosting or buttercream. I googled and apparently that's ok.

Yes, yes, buttercream will be fine - I often freeze cakes iced with buttercream Smile

Hope it turns out brilliantly!

thank you!
