meal ideas for coeliac with insulin resistance?

I'm running out of ideas... I was diagnosed coeliac yonks ago and it's second nature for me now to plan gluten free meals. But now I seem to have insulin resistance too.

So I need gluten free, low glycaemic index meals - which is like a diabetic diet - ie not too much potatoes, pasta, rice, or bread, and no sugar and not too much fat. I managed okay for the first few weeks, but am really stuck for ideas now. My best meals have been chicken and chick pea curry with spinach, sausage and lentil casserole, home-made veggie burgers with salad, a Jamie Oliver butter bean thing, roast chicken with lots of veg, home-made chicken soup, and chilli con carne with wholegrain basmati. So that's a week's meals sorted... but will get mighty bored if I just repeat that week for the rest of my life!

I can serve extra potatoes/rice etc to bulk up the meals for DH and DS as long as I don't eat too much of it myself.

Any ideas? Grateful for any suggestions at all!

Does the insulin resistance mean that you have to follow a low carb diet? My dh is coeliac and my ds2 is diabetic.

I bought a copy of the 'carbs and cals' book, which shows all sorts of different foods carb counted. It would help to know what are the definite no nos.

There is also an anthony worral thompson cookbook for diabetics - not sure how gf it is though.

Can you get a dietician referral?

Yes, it should be low carb - like diabetic diet basically. Insulin resistance - from what I've read it's sometimes called Syndrome X or metabolic syndrome, or sometimes called pre-diabetic as it's sometimes the precursor to developing Type 2 diabetes if you don't turn it around. I had it once before when I had polycystic ovaries and now I've been getting bad headaches, dizzy spells and fainting, and it definitely seems to be affected by how much sugar I eat. I've had fasting blood sugar taken and this is the tentative diagnosis, although Dr wants to do another fasting blood sugar. If I do have it I want to be super-good on my diet and turn it around - do NOT want full blown diabetes! Annoyingly I'm not overweight and am teetotal, but have always been a crash-dieter/sugar-binger and that probably hasn't helped....

Good luck with it. Although if it's any comfort, dads type 2 and now much happier (& less grumpy!) now he's on insulin injections.
I've a feeling that I'll become diabetic in later life as I am temporarily so when pregnant and with my family history itsin the genes. Trying my best though!

I suspect I have insulin resistance (PCOS, family history of type 2 diabetes).

Chickpea and chorizo stew (you only need a little bit of chorizo to get the flavour)

Salmon with lentils here

Chickpea and veg tagine

Homemade pizza with wholemeal gf crust, low fat mozzarella and loads of veg on top, served with a salad

Aubergine parmigiana

Prawns with chilli, garlic and ginger

Three bean chilli on top of baked sweet potatoes with a dollop of sour cream or fat free Greek yogurt

Thanks flibbertigibbert - those are all good ideas and might make another week's worth of menu planning. If I plan ahead I'm hoping I won't get so tempted by the sugar rush...!
