Hi
I need some inspiration for a storecupboard tea I can make for dd (2.6) please, ideally not involving pasta! I seem to resort to pasta most days, and would like to make a change
Have quite a well-stocked cupboard just no ideas right now...
thanks for any ideas!

I used to make mine vegetable polenta fingers. Just sauteed off a load of veg cut small - whatever was in the fridge. Made up some polenta as per packet instruction, put in lots of parmesan and then the veg and put in an oiled tray to cool and set. Cut into fingers and brown off in a pan. Yum. Freeze nicely too.

thanks, those sounds nice. I can only seem to get polenta in blocks, did you use the dry polenta for this?

i make little fritter/pancake things.

1 egg + flour and you van also add dried polenta to the mix if you want. Then add any combo of filling.

i typically use ham and peas or sweetcorn or i use crab and sweetcorn for a treat...these go down v. well. You could also use tuna and sweetcorn, left over sausage and peas. just bits of veg.

Once it all mixed in then just dry fry them a few mins each side. They also freeze well.
