Butternut squash suggestion please.?

Hi folks,

My DH has presented me with the biggest and most beautiful butternut squash I have ever seen (brought home from the charity that he works at as it was lonely and leftover from a harvest festival.)

ANyway. It is so GORGEOUS!

And I need to give it a fitting send off...

ANy ideas how I could prepare and cook this fabulous fruit?

mmmmm I wonder if you could roast the squash first.... for extra nuttiness?

I don't like butternut squash but used one in instead of a sweet potato in a Veg Dhansak the other day (and i don't like curry either)

I can't find the recipe I was looking for but this one is pretty similar, as is this one. Haven't tried either of these exact recipes, but when I have done similar they have been delish. Second the risotto idea too.

One of my favourite meals is a salad of roasted cubes of butternut squash, with baby spinach, feta or haloumi cheese and pine nuts. Splash of balsamic on the top.

Jamie Oliver's stuffed bns is v good. I usaully leave out the sundried tomatoes because they are evil - and serve it with a red onion relish of some sort, to counteract the sweetness.

We had butternut squash chips with steak tonight and tomorrow I will put the rest into a chicken curry.

THE best BNS soup recipe - packed with flavour. Have made it 3 times in the last month......

Roast squash ( halved and seeded and drizzled w olive oil ) for 40 mins
Dry fry 1 teaspoon each caraway, cumin and coriander seeds for 2 mins. Crush with p and m, add half a teaspoon cayenne
Fry 1-2 onions and 2 cloves crushed garlic in butter for 10 mins
Add scooped out roasted squash
Add spices
Add 750ml chicken or veg stock
Simmer 5 mins
Liquidise
Add 2 tablespoons good creme fraiche

mmmmm delicous! Lots of ideas for the halfI popped into the freezer...

Friend suggested the following andafter testing it thi eveningI would recomend:

Roast large chunks with garlic and thyme. Then add feta cheese, bits of bacon and have with pasta :)

DD loved seeing the seeds inside when we cut it open.

The most simple soup recipe from Fay Ripley is cut it in half, sprinkle with rosemary and olive oil, bake in oven on Gas mark 6 for 1 hr 15 mins, take it out and blitz it then add 500ml of veg or chicken stock and heat through for 20 mins. Delicious and so effortless.

-Butternut squash and sage risotto
-Roast, mash and mix with feta, wrap in filo pastry triangles.
-Roast and cut into chunks, make a cream & tarragon sauce, add a bit of tallegio cheese and put in a puff pastry pie
-Slice and make dauphinoise as you would with potato.

Tarragon is lovely with butternut squash.

Make soup with onion, leek, carrot (optional), potato and bnut squash and tarragon.

This is one of FrannyandZooey's bulk cooking recipes. I mainly love it for the use of the word smooshy but it's also a very tasty dish!

Lentil and butternut dhal

Fry onions, spices if you like them. Mushrooms are always nice, peppers, whatever you have to hand. Fry red lentils for a few minutes, then add stock and cook until nice and tender and smooshy. Meanwhile steam some diced veg, butternut squash is delicious but any root veg are nice, sweet potatoes, parsnips, a few carrots as well. Add to the lentils, and season, and hopefully you have a nice thick sauce with some tender pieces of veg in, which is good with rice or quinoa.
