Either the best jar of curry you ahve tasted, OR a really easy recipe to amke a chicken curry from scratch.

dont mind spicy as its for all the adults....who all LOVE spicy.

Theres lots of fab recipes on here, but im SO lazy, its gotta be easy peasy!

Easy peasy and semi authentic:

Buy jar Patak's tikka masala curry paste (the brown stuff in a jar not the actual sauce).

Chop onion and dice chicken.

Fry onion in oil. Add curry paste (for 2 of us I would use approx 1/8 of jar, scale up depending on how many you are cooking for), add chicken and cook til pinkness disappears. Add tin tomatoes (more depending upon how many cooking for), simmer til tomatoes are reduced, add tin (s) coconut milk and simmer for a bit then serve.

Even easier:

Chop onion and fry in oil until softened.

Add Patak's curry paste and fry for a couple of mins to cook off the spices.

Add coconut milk and bring to the boil.

Throw in chopped chicken and any veggies you fancy.

Simmer for 20 minutes.

Enjoy Smile.

Is pretty authentic as was given to me by anglo-indian friend.

I recommend the miss masala blog for curry recipes, they are authentic and tasty! There is a book but all the recipes are online

Yes, definitely Pataks curry paste then add in stuff (onions, tomato, peppers maybe).

Definitely use Patak's paste!

It might be worth doing one spicy chicken curry (madras or rogan josh?) & one milder veggie one (TM or korma?) - unless you definitely know that all your guests are meat-eaters & like their curry spicy?

If you have a slow cooker you can make my yummy kashmiri lamb.

marinade cubed lamb in kashmiri lamb spice or curry powder.

Put lamb in slow cooker.
Pour over a can of chopped tinned tomatoes.
Pour in half a pint of veg stock made with cubes or powder.
Stir in a squirt of tomatoe puree and one chopped onion.
Cook on low all day.

These spice mixes are absolutely AMAZING: Rafi's Spice Box

I saw them being recommended on MN and they are by far the best ready made spice mixes I've ever tried. Seriously!

They are little packs of whole and ground spices with other ingredients like onions and stuff. All you do is add water and meat/fish or veg. Extremely low effort! Smile

My friend had a Halloween party last year and I helped her with the food. She's a veggie so we made a big vat of veg curry, using Pataks paste (can't remember which one but I have used Korma, Tikka Masala and Rogan Josh - all nice!) and lots of veg and fried up a batch of chicken seperately. We thaen added half the veg to the chicken and stirred yoghurt into both - twas yum!

Also love Thai green and red curries, can make pretty much the same but use coconut milk instead of yoghurt.

For something a bit different, what about a tagine? I made a lovely chicken one on Friday night from the October issue of Delicious magazine, it should be on the website (just google Delicious magazine - I'm crap at links). Was bloody Lovely!
