roast butternut squash - to peel or not to peel?

I love roast butternut squash. Have always peeled it first, for no other reason than it seemed to be the right thing to do. However, recently I've seen a couple of recipes where they've said not to peel, just de-seed - so much easier so will try. What they don't say is whether you then eat the skin or just scrape out the flesh once cooked. Anyone know???

You can eat the skin if you want as it goes very soft, but I tend to peel it when cooked, its just slides off.

If you peel it before roasting the outside of each chumk goes a bit dry. I halve the whole thing unpeeled and drizzle with olive oil and then roast, then scoop out flesh once cooked.

My MIL eats the skin but I'm not overly fond of it.

Peel before boiling, but leave unpeeled if you're roasting. Peeling a squash is a major chore imho, to be avoided if at all possible!!

I don't eat the skin, though, just scrape out the mush.

I am in the majority in that I love the skin, but def only when roasted.

The seeds are also really nice when raosted, they taste like Peanuts. :)

I roast in the skin, and then bung the whoel lot in the soup, its a fab thickener!
