Love slow cooked pork belly and am looking for some interesting and true-tested recipes as have amassed about 3kg of it.

Rub the underside in a mix of salt,pepper,crushed fennel seed,garlic,parsley, Rosemary,any fresh herbs ESP fennel fronds and honey.
really slather it on, then roll your slab of pork belly into a long roly poly shape and tie up with string leave in the fridge for a few hours or overnight. allows time for flavours to develop but also for crackling skin to dry out.
slow roast for hours and hours till melting meat and crispy.
call it porchetta,

variation

make up a stuffing of chopped apple, onion and cubes black pudding, slather onto meat side, roll and tie up as before.

Marinade it in a mixture of Seville orange juice (available in Jan/Feb - the juice is bitter so if you can't get it you can substitute freshly squeezed oj mixed with lemon juice), Tabasco, honey, garlic, and freshly grated ginger. Then slow-roast it. Mmm.

Put whole belly (with its skin still on) into a pan and cover with water; bring to the boil and boil for 10 minutes.

Drain and pat dry.

In a wok/large frying pan fry skinside down, in 3 tbsps oil for 15 minutes. (You may need to cover the pan a bit as it spits).

Put back into your original pan and add:

4 fl oz dark soy sauce
4 fl oz rice wine/rice vinegar
4 fl oz water
4 tbsps light soy sauce
4 tbsps sugar
a good chunk of ginger
some sliced spring onion

Bring to the boil, then simmer on as low a heat as you can, with the pan covered, for 3 hours.

Serve with plain rice and stir-fried pak choy/other greens.

Boston baked beans uses belly post slices this works really well for bombfire night too. Very cheap & tasty
