What do you give for lunch instead of bread?

DH and I have just realised ds goes through an alarming amount of bread a day. (Well not exactly alarming but it is to us as non bread eaters)

What do you do for lunch? We always give sandwiches.... which is the problem.

I need something quick and easy. It's for ds who's 18 months and twins of 2 years, the main problem being they don't like salad (else I'd do lots of variants on pasta salad etc, but the twins don't like it.) It needs to be cold, as I always do a big hot dinner in the evening....

I've given the twins crackers and cheese which they love but ds hates cheese. Even cream cheese

(I tried hiding it under hommous but no he licked the hommous off and spat the cracker away.)

Omelette, scrambled or boiled egg, beans, vegetables, veggie sausages

Wraps made w/chipatis and torillas. Make w/melted cheese, humus, white bean dip, meats, etc. Stuffed pitas - again, humus, white bean dip, ham, etc.

Couscous w/cut up veg - chuck in a can of chopped tomatoes and diced olives. Mashed potatoes w/melted cheese and baked beans.

Cut up chipatis into 'fingers', spritz w/olive oil and then bake till hard. Serve them like crisps w/avacado dip/guacamole or melted cheese.

II make wheat-free bread for ds's lunchbox because he's intolerant. Sometimes I do rice salad or quinoa salad. I find the hardest part of being wheat free is finding something which is quick, easy and filling.
Beans and pulses are quite filling.

oatcakes and cottage cheese

boil up mixture frozen veg (broccoli,peas,carrots,beans) with grated cheese

tinned fruit in natural juice with yogurt

chick pea patties and reduced tomato sauce

fish fingers

I don't mind wheat, I'm worried about too much yeast.

We mix between croissants, sandwiches and pittas.

ds would eat salad which the twins won't, but he won't eat cheese, which they would.

I'd try chipati but it's just flat bread isn't it?

We're trying cous cous for dinner, fingers crossed

Greek yoghurt w/fruit is another option. Have you tried cottage cheese? Mix w/chopped herbs, olives, and bits of bacon.

Brown rice with beans, onions and courgettes.

What about rice with ham and peas/cherry tomatoes in?
Pittas with grated carrot and raisins? (I put cream cheese in too but if they don't like that...)

Yum polenta. Yes! Make it with stock then let it cool, then fry it or roast it brushed with oil so the outsides are crisp but the middle stays soft and fluffy.
We went on holiday with another family and all 8 kids loved the polenta. Some kind of record I feel.

When you do fried tofu, do you just cut it into chunks and fry it up unseasoned? Or flavour it up a bit? Plain veg oil, or a flavoured oil - like sesame or olive? Am new to tofu, but DD seemed to like it.

If it's the yeast that you're worried about then I don't think chapatis or any flat bread like pita or torteillas will have yeast because they don't rise. You could also try Irish soda bread (which uses soda to rise instead of yeast), or potato cakes.

Silken tofu is quite nice just fried as it is expat, but it needs a bit of salt. It's a little bland but my kids like it.
You can always marinade it before frying (in ginger, soy sauce, garlic and oil).
I also deep fry it then put it in stir frys which I season with chinese five spice (paste or powder).

what about something like noodles? I know its warm but only takes 5 mins rather than preparing a tea.

is he allergic to yeast? don't see the problem giving sandwiches if not. After all he'll no doubt eat them at school

Rice, pasta... i also use wraps & pitta bread, just for variety.
