How do you cook pheasant?

Prompted by reading Danny the Champion of the World again, DD has requested I cook roast pheasant.

Her wish being my desire Hmm (or more to the point, rather fancying it myself anyway), can you share your nice recipes and top tips with me please? Google isn't particularly inspiring me. Also, it tends to dry out, doesn't it - how does one avoid that?

And what goes well with it, apart from the obvious roast potatos and parsnips?

Casserole it with bacon over the top. Stops it drying out and gives it a bit more flavour.

Can't think of anything else at the mo. We get loads of it this time of year and get sick of it tbh!

Casserole is lovely. Also have you thought of a game pie? DH is going to make one next weekend (tis his birthday). Also v good in a slow cooker - the key is to make sure it doesn't lose any moisture, as the meat has so little fat.

Pot roasted with celery and vermouth.
It does dry out: if you pot-roast it with liquid, it stays moist.

Cut out the breasts, (chuck the rest into the woods for the foxes) - saves plucking the damn things.

Do Clarrissa's pheasant in horseradish or mustard sauce.

it dries out very easily; you can just do it like a chicken but with lots of bacon, but my favourite is pot-roasting with butterbeans and chorizo - recipe from River Cottage Everyday.

My favourite is a Nigella Pheasant with Gin and It very yummy indeed it is a one pot dish so easy and it does not dry out at all x
