What is your favorite way of eating tinned tuna?

Hi,

I always buy nice tinned tuna and salmon as I think it's nutritious and good value... good for a once a week thing - however I think my family don't love it as much to eat as I do!

I'd like to try other things to do with it before I ditch it and only eat it alone Grin

Currently all I've done for us is mixed it with mayo, pasta and sweetcorn (which I think they like more); mixed in to a tomatoey pasta bake; and put in sandwiches with cucumber and mayo.

What's your fave family meal involving tinned tuna or salmon?

oh yes tuna bean salad also a great favourite here.

OUr family's comfort food - 'fishy rice' fried onion, green pepper, mushroom soup (condensed) tuna, rice, eat with crisps or tortillas. Very tasty, very quick

Oooh, I haven't done it for years, but it's making my mouth water thinking about it now - when I was a student in France my flatmate used to mix a tin of tuna with grated Emmantal (sp?) cheese, black pepper, tinned artichoke hearts, sliced tinned black olives, cherry tomatos and then pile in on to halved baguettes and grill it - yummy!!

A friend gave me a slimmers' recipe for tuna baked in white sauce made with cornflour and dried dill for seasoning, cooked in oven with chunks of hard-boiled egg, and plain new cooked potatoes either side of casserole. Served with separate green veg or salad, this is nothing like a slimming dish and now a favourite.

I'm intending to have a go at making tuna meatballs with a tomato sauce at the weekend for the DCs. Anyone tried this? I don't have a recipe just have loads of tins of tuna in the house and thought I would give it a go.

These are really great ideas - I have had tuna with white beans for myself and think my family actually might like that if I keep the flavours quite simple Smile

Also intrigued at the idea of the tuna meatballs Dastardly... let me know how it turns out!

Tuna melt - serves 2

slice a large baguette lengthwise and toast on the cut side. Mix 1 tin of tuna (prefer ones canned in water)with 2 tablespoons of mayonnaise and 4 tablespoons of sweetcorn. Pile the mixture on top of both sides of the baguette, sprinkle with a serious amount of grated cheese and grill until cheese is brown and bubbling.

French lady I knew used to make this salad. It was abs lovely.

Tuna forked onto plate surrounded by fresh sliced tomatoes, drizzled with Olive oil and sprinkled with loads of chopped fresh parsley. LUSH.

I just like it with malt vinegar, a little bit of mayo and on a sandwich with pickled beetroot.

Unfortuantely I am the only one in the family who will eat it that way.

A variation on pasta bake= rice bake.

Toast rice (white) in a bit of olive oil, garlic and chopped onion, then half in bottom of baking dish, add chopped potatoes flaked tuna and a layer of grated cheese. Repeat layers. Pour over a mixture of stock/white wine and water (add salt and pepper if stock not salty) Top with grated cheese and bake. Keep checking you don't need to add more liquid, it's ready when golden brown and rice and tatties are cooked.

If you google "Jools' Saturday Afternoon Pasta" there's a really nice Jamie Oliver recipe. It's basically pasta, tuna and tinned tomatoes but it also has basil, chilli and cinnamon in and it's gorgeous, really quick to make too. It tastes better if you use fresh lemon juice (not jif etc) though. JO also suggests you get jarred tuna rather than tinned but I've never seen it for sale anywhere ever, so I use tinned and it tastes alright.

My kids like:

Creamy tuna and peas - make a pint of savoury white sauce using a chopped onion and some garlic, mix in a tin of tuna and about 1lb of thawed frozen peas. Season with plenty of black pepper and serve over mash.rice/baked potatoes.

TUna lasagne - cook a chopped onion and garlic in some oil until soft. Add 2 tins of tomatoes and cook until saucy. Chuck in some spinach, nutmeg, mixed herbs and cook a few minutes. Stir in a 400gm tin of tuna and a handful of prawns, if you like them. SHake over some lemon juice and season to taste. Layer with lasagne sheets and top with some cheese sauce.

TUna puff pie - butter 8 slices of bread. Lay four of them in the bottom of a lasagne type dish. Sprinkle a tin of tuna over the bread and then about 4oz grated cheese. Put the other 4 slices of bread on top so you have sandwiches. Beat 4 eggs into a pint of milk with salt, pepper, mustard and some parsley. Pour over the bread and sprinkle with a little more cheese. Leave aside for about 1/2 an hour and then bake at 180 for about 1/2 an hour or until set, puffy and golden.

Tuna on toast - fry an onion and some garlic until soft. Stir in a tin of condensed mushroom soup and 1/2 a soup can of milk. Stir until smooth and heated through. Chuck in a tin of tuna and a big tin of peas or sweetcorn. Season to taste and heat through. Pour over toast. Or you can use it as a pasta sauce or a topping for mash.

Tuna and chick pea burgers - mash a couple of tins of chick peas with a tin of tuna, some cumin, coriander, chilli, a handful of breadcrumbs and an egg and make burgers.

Tuna fishcakes

Fishy fritters - mix tuna/salmon with corn and cooked noodles. Add an egg, milk and flour to make a batter and fry in tablespoonfulls like drop scones.

TUna pasta salad - cold cooked pasta, tuna, corn, onion, red pepper, mayo and lemon juice.

Tuna wedge melt - 2lbs potato wedges or oven chips, almost fully cooked. Mix a 400gm tin of tuna with 1/2lb grated cheese, a finely chopped onion, 3 or 4 tablespoons may, lemon juice, chopped parsley and black pepper. Spread over the cooked wedges and bake at 180 for about 20 minutes. You can add some sweetcorn to the mix as well, if you like.

Tuna rice salad - cold, cooked rice, tuna, onion, corn, cucumbers, red peppers, cherry toms, oil and vinegar dressing, salt pepper and finely chopped chilli

Tuna pie - mix with fried onion, tin tomatoes, tin baked beans and top with mashed potatoes.

TUNa pie - mix with mushrooms, onions, corn and thick white sauce, top with pastry.

Mix it with sweetcorn, onion, tomatoes and mayo and serve in baked potatoes

TUna curry - fry an onion with 1/2 a jar of curry paste. Add 2 tins of chopped tomatoes and cook until saucy. Stir in a 400gm tin tuna and mix about then add a couple of sachets of creamed coconut and some peas.

Oh dear, I didn't realise that I had so many different tuna things Blush we don't eat it all the time, honest.

The only way DD will eat tuna is in a 'special picnic sandwich'. Get a smallish round loaf, cut the top off and pull out the innards, then add a tin of tuna which you have mixed mayo into, some sweetcorn, peppers, tomoatoes and capers. Olives if you like them. Drizzle some olive oil over the top and put the lid back on. Cover it with a board and put a weight onto it for an hour or so. It will all be compressed and easy to slice into wedges. She sometimes take it to school.
