WWYD with a bag of beetroot?

I have returned from a visit to my mother with a bag of beetroot.

My favourite tried-and-tested beetroot recipes (soup, rosti) involve putting on marigolds and peeling/grating the blooming stuff, but we are just in the messy stage of weaning ds2, and with a toddler as well I just can't cope with any more mess!

On the other hand I do love beetroot and don't want to waste it.

Can anyone suggest a delicious and hassle-free way to cook it?

I don't believe I'll be feeding it to the DCs , so recipes may be as adventurous as you like.

The easiest way to cook it is to bake it in foil.

I like it best in salads. There are lots of interesting combinations: goes well with goats cheese.
Your toddler could eat cubes of beetroot.DCs like beetroot and apple salad because it makes the apple pink.

As above, it's lovely roasted and warm.

I'm looking at a starter from Nigella's book atm which is basically dry fired halloumi with a beetroot and lime puree on salad leaves.

For the puree:
150g cold cooked beetroot blitzed with 2 tsps lime juice and 2 Tbsp olive oil.

Looks good but then we love Halloumi in this house.

DH tops and tails it, boils it, drains it, and then unsheaths it. The skin mostly comes off like a condom, especially if it's the longer variety, but it works with the round ones too. HTH.

(After that we usually have it iwth hummus/yogurt/herb mixture, or in a salad with goat's cheese etc.)

I read somewhere that if you just wash it and don't cut it at all till after it's cooked then it won't 'bleed' all over the place. So you can bake it whole add it and stock to cooked onions and garlic, carrots etc. and you've got borsht!

Only cut the very tip off & the leaves then boil - as Unprune says the skin just comes off

This might sound a bit weird, but cold cooked beetroot sliced thinly is lovely in a sandwich with cheshire cheese. Can't take it in a packed lunch, cos the sandwich will be all soggy by lunchtime.

I just roast it, with potatoes etc as part of a roast dinner.

You can make chocolate and beetroot cake too I think (never done it myself though).

chocolate beetroot cake on the Riverford website is lovely. i freeze cooked beetroot and then thaw it out an use it for this cake. tb not wierd at all, i love cheese and beetroot sandwiches. I cook my beetroot in my pressure cooker btw.

I agree with the roasting idea - just with some thyme and a bit of olive oil and salt. Then it's lovely with salad and feta cheese!

Thanks all! Boiling whole and then unsheathing sounds like the answer to my problems.

And then... mmm... lots of fab ideas there!

tb, you have reminded me that I used to put slices of pickled beetroot in my cheese sandwiches.

And Australians routinely add sliced beetroot to burgers. Apparently it's much more mainstream over there.
