Am utterly uninspired to cook these things, I'm not even a huge fan but DH likes them. I've got mash so something sauce-y to go with them would be good... any ideas?

I marinate mine in some olive oil, lemon juice and thyme and then either grill or pan-fry. V.yummy.

Two tbsp of lime juice, 2 tbsp olive oil and a good dollop of wholegrain mustard. Mix together well and coat chops on both sides and grill.

Cut off the fat, seal meat, soften some onions add some veg (red pepper/carrots) then add cider. Reduce to burn of alcohol then add veg/chicken stock.

Cook slowly until tender and falling apart and add quartered apples for another 15/20 mins until apples soft but still keeping shape.

Then, after you've turned off heat, add a large dollop of cream or creme fraiche and stir in until well mixed.

Serve with mash or butternut squash mash.

I have used lots of pork cuts to make this same meal and it's always lovely.

Preheat oven.
Butter your frying pan.
Pork chops on
sprinkle salt and pepper
turn
sprinkle salt and pepper
turn
sprinkle Herbs De Provence on both sides

Move pork chops over to an oven tray.
coat in mustard
spoon over icing sugar

bake for 15 minutes.

(Pineapple under the icing sugar is optional, but I find it too sweet)

I do this one often and all the family love it:

Pre-heat the oven to 180c. Brown the chops in a frying pan with a little of olive oil. Once browned, wrap in foil and put in a roasting tray. Slice up some mushrooms, onions and cook until soft in the frying pan (with the pork fat) and a little butter. Once cooked, add a teaspoon of dijon mustard and a few glugs of double cream and spoon over the pork chops and put in the oven for about 30 minutes, until the pork chop is cooked through. Serve with mash and french beans.

"thrushy noonie" - not a phrase you want to see on a Food thread.

UnrequitedSkink · 08/10/2010 22:43

Loving the 'thrushy noonie' there, thanks for that Grin

Some brilliant ideas, MN to the rescue once again!!

Trim the fat, cut in a few places along the edge, beat them to tenderize. Cover with flour, then egg then breadcrumbs. Fry til golden brown. Yummy.
