What would you serve with beef pot roast?

I'm doing delia's recipe and it's full of beef Hmm, onions, mushrooms, carrots, parsnip & squash.

What on earth should I serve with it? There will be 9 of us eating it for lunch tomorrow including 2 fussy teenagers and 3 toddlers.

bread? Mash? Roasties? Broccoli?

Well we'd have roast potatoes and yorkshires with some more veg. And horseradish! But that is because beef is the perfect excuse for yorkshires and horseradish.

Spring greens or cabbage, just steamed.

I usually do the usual mash and greens but recently I have tried doing roasted mediterranean veg instead so peppers, onions, courgette, mushrooms, e.t.c... onto a baking tray, oil and herbs over and then cook for about 40 minutes. Also added in halloumi.

Only did this for something a bit different and because it was summer as well - wanted something more summery to serve with it. Would probably still do it in the winter as well though.

oooh yummy mash with horseradish - great idea. I luuuuuurve cabbage but I'm the only one!!!

Is it worth freezing left over mash? what could i use it for when I thaw it (no microwave)?

Leftover mash can be used for loads of things. I'd keep it in the fridge though and use ASAP. You could make fishcakes or vegetable or lentil type burgers. It's nice in omelettes with other things. Could make bubble and squeak! Corned beef hash, that kind of thing. Potato pancakes (mix the mash with about 2oz flour for each 1lb of potatoes, season with salt + pepper, form into flattish patties and grill until golden. Can also add cheese, spring onions, chopped bacon etc. They're nice plain though with a cooked breakfast). Topping a fish pie/shepherd's pie/etc? A nice version is rattatouille topped with mash and baked like a shepherd's pie.

Most of these things you could make up and freeze to be cooked at a later date.

Oh although if saving mash to use later it's best to take the saved portion out before you add milk or butter as it goes off much quicker if you add these. You can always add milk/butter and mash a bit more before using it in the recipe.

What about some dumplings? Lovely for soaking up all the juices, I always make with veggie suet and herbs from garden.

Dumpings or Yorkshires. It's a big meal so no spuds to detract, def nothing with cream in. Def no mash. blerh.
