Beans cooked from dry...can i freeze them?

I haven't yet but have bumper packs of chickpeas and haricot rosa ( Confused ) and am disorganised want to save on time and lecky. Thank you!

freeze in cooking portion size resealable bags. the size you'd use for sandwiches

some of your chickpeas can be made into hummous.

add them to couscous

add them to stews (google moroccan lamb stew which should bring up a good recipe with chickpeas and butternut squash in it and it uses cheap portions of lamb to boot. neck fillet I think)

Haricot rosa I have never heard of but they may be suitable for home made baked beans. if you search MN foods for baked beans there is a great recipe by a poster called FrannyandZoe (sp) or just google it.

I am mad keen on cooking kidney beans in big portions and freezing it for chilis, rice and beans (caribbean food) and to make refried beans which I eat almost every day for breakfast. if you want my recipe for kidney beans, let me know.

I haven't heard of the haricot rosa before either. Got them from the asian supermarke and they are cheap look lovely. We're a tad short on freezer room so i didn't get kidneys as the supermarket does tins of them that are quite cheap.
Thanks for the ideas. I do refried beans too but thank you very much for the recipie offer SmileWhen i lived in frozen nova scotia i lived on home made baked beans. Nothing beats the cold like beans Wink i love beans. Smile

Lets compare notes then foxy Grin. I fry a finely diced onion and garlic gentley, chuck in some corriander and cumin seeds (crushed if time, if not they soften out any way) chilli and a cinnamon stick in so they all toast together in the oil, yum. Then chuck in squashed beans and stock and keep cooking till it sticks to the spoon. Fresh corriander, lime and salt to finish.

Wrap in a homemade tortilla (shop ones are wrong) with cheese and guac and salsa and yoghurt and smoked tabasco and lettuce.

God i'd so hungry and ds has been bfing for ages when i was planning on stuffing my face making tea.

shop bought ones are vile as they salt is added before they have finished cooking in my opinion. in the caribbean beans are cooked till they skins begin to split and only then is the salt added . add the salt too soon the skin stays tough. not a problem if you are making refried beans I suppose but not nice for chili or rice and beans.

my ingredients in the pot are onions, garlic, thyme or oregano, black pepper about an hour before they'll be finished. once they are finished, I add salt.

for refried beans, more onions and sometimes coriander leaf too if I am making breakfast burritos. What goes into my burritos depends on what is in the house. It invariably has a tomato salsa base.

I also agree that shop bought tortillas are just wrong.

Scootergrrl, soak the beans for overnight or 6 hrs, bring to a boil, turn down the heat and leave the lid on just a bit so it simmers away. top up with water till they are 'done'. An say half way to done or nearly done, add spices add salt when they are done.

You can make a good bean soup/starter by blending some beans and its 'caldo' in a kitchen blender add some of the spices which me and or MFM have said and serve with a dash of sour cream as a garnish. Serve with either Nachos, flour or maize tortillas.

If you have a pressure cooker you can cook dried beans in hardly any time at all - even cheaper. Grin

Is there a recipe for home-made tortillas too?

yes but I do it without weighing. I think I wrote it out for MN once but can't find it now.

I can find this thread however where I brought up the idea of sopapillas which are heaven sent and sinful.

I just found the sopapilla recipe too which would work for tortillas imo

and I just reread it and found MFM on it! we ought to get together sometime to eat!

I have a pressure cooker with no lid that my folks off loaded gave me when i went to uni. Not much good eh?! Grin

I too make tortillas without weighing but i did measure it once for a thread on here. I basically just mix bread flour and water with a pinch of salt to make a dough. Give it a tiny kneed, and let it rest till you want it. Then pinch off golf ball bits and roll flat, dry fry in a hot hot hot pan. Some people put milk and stuff in but with breads and things i always aim for as few ingredients as poss

Yes, it must be a fairly-laid back cooker, or perhaps a passive aggressive cooker as it came from my mum. Hmm Grin
