Had a bit of disaster.Last lot of raspberry jam not properly set, I am sure I did not boil long enough. Can I rescue it by reboiling.

Yes - I would add a bit more sugar, particularly if it's a low sugar recipe. Also some lemon juice - increases pectin level so should help the set.

Thanks Essie, You dont happen to have a good tip for getting reluctant jam out of jars, do you? am expecting it to be a messy job.

Warm them slightly - putting in a washing up bowl with warm water half way up the side would do. Or microwave - have done that to get out the last cruddy dried up bits.

Our family love runny jam and I was brought up on mum's runny marmalade. we were v disappointed when last batch set. when I made strawb jam for 1st time in summer I thought it hadn't set so boiled and boiled it and in fact it's semi set. Runny jam rules ok I'd say.

clare 21. Yes I am sure runny jam can't be that far away from coulis! Great on Icecream I imagine, maybe I will spare a runny jar.
