Got loads of lamb left over from yesterdays roast - what can I do with it?

Title says it all really, is there anything lovely (and not fattening!) I can do with the leftovers - it was such good meat!

When I was little we always used to have rissoles with what was eft of a leg after roast hot and then sliced cold - hate cold lamb, ugh.

The left lamb was chopped or minced finely, mixed with a packet of sage and onion stuffing and a couple tablespoons of Branston pickle.

It was then formed into fat croquettes, egg and breadcrumbed and fried.

I'd probably hate them now, but loved them when I was little.

My DH had rissoles too. His Mum's version was to make a becamel to bind, mix in the minced lamb and some herbs, shape into patties and dust with flour before frying. I still have to make them for him.

Forgot to say there was a yummy looking recipe for lamb moussaka using cold leftover meat on This Morning today. Not very healthy but looked great (does need mincing again though).

This looks good - "Shred lamb. Fry chopped onion & garlic, add good pinch of paprika & cinnamon & lamb for last minute. Spread onto pitta breads, cook in oven for 10 mins Gas 4. Sprinkle with fresh mint leaves, serve with hummus."

Hot Pot

Simple & tastes almost better than the roast itself (well I think).

Cut up the lamb into fork-sized bits & finely slice an onion. Peel & slice potatoes to a width of about a 50p - they have to be evenly sliced or you'll have uncooked bits of potato - I use a mandolin for this.

Casserole dish - one layer of lamb & onion mixed, layer of potato. Repeat. Make up some stock (with a cube is fine) to 3/4 pt and pour in til it comes to just below the top layer of potato.

Dot top layer of potato with butter & rosemary. Gas Mark 3 for about an hour (or til top layer of spuds cripsy & bottom layer lets a knife through it without easily. Serve with Worcester Sauce & baked beans.

You can make a tuna version for fishatarins too.
Can be put in the oven on S for 3-6 hours & it will come out fine too. One of the best reasons for winter IMO

When I have leftovers like this, I use the lovefoodhatewaste website - we've tried several of the ideas, most of which we would never have tried before and found them good. Sometimes we try to make sure we have leftovers so we can make the recipe! Espec, when it comes to the fritters made with leftover meat from a roast.

I'd make a rogan josh curry!

Loads of onions, loads of tomatoes and coriander as well as a good punch of chilli and cumin.

We ended up having lamb tikka masala which was delicious - and then some of that was left over so I had a jacket pot for dinner tonight with it on. So many yummy meals from one joint, very impressed!
