Have been given a big bag of Quinces, any ideas what I can do with them?

Have been given a large carrier bag full of Quinces and I have never eaten them in any form before, (let alone cooked them), so all suggestions are greatly welcome

Good for jams and jellies, also fruit cheeses

Grate them and add them to apple for the most wonderful fruit pie or crumble filling.

Leave one out in the sun on a windowsill to ripen fully - the smell is just divine, will scent the entire room.

Was just looking at a recipe for membrillo - Spanish quince jelly. Good with tapas stuff - little cube of the jelly ontop of a slice of manchego cheese.

Spiced Quince Gin
?500g grated quince
?180g white sugar
?1 cinnamon stick
?6 cloves
?1 inch knob root ginger, sliced
?½ vanilla pod
?1 75cl bottle gin
?1 litre Le Parfait jar, sterilised
Place the quince, sugar, spices and vanilla in the jar and top up with gin, up to one inch from the top, making sure all the ingredients are covered. Shake regularly for the first couple of days to make sure the sugar dissolves.
Leave in a cool dark place for at least three months or no longer than one year. Strain the liquid through a muslin cloth and bottle.

I am VERY jealous, quinces are just about my favourite fruit. I miss the south. Sigh.

First, leave them in lovely bowl or on a shelf, looking artistic.

They will take a little while to ripen and start giving off their perfume. It's a beautiful smell.

You can bake them like apples, with spices, and eat with cream or custard. If you bake a quince whole in cold water pastry, that's called a quince coffin. I've eaten it but it was made for me and I wouldn't bother myself.

Membrillo is fabulous and lasts for ages. It's really easy and you'll feel very smug. You can make it with chilli in it too.
