Apple recipes- inspiration needed!

I have about a million eating apples in my kitchen and I need to start using them up (my tree went into overdrive this year!) can anyone suggest some easyish recipes that'll get rid of them all please.

I've got loads of cooking apples this year and would love some different recipes if anyone wants to post them.

5 or 6 apples peeled, cored and cut in to eighths (ours were quite small apples)

165g butter

165g brown sugar

75g ground almonds

165g self raising flour

3 eggs

1/2 - 1 teaspoon cinnamon

1.5 teaspoons baking powder

Stew apples and cinnamon with a little water for 5 minutes.

Cream butter and sugar.

Add eggs

Add almonds, flour, baking powder

Add apples

Cook at 170C for about 40 minutes

(Have also done this with plums and was v good)

Thanks Mrscurly I'll give that one a go tomorrow- are eating apples ok in it or do they need to be cookers?

I'd do apple cake too, or apple muffins

also like them in casserole with pork sausages

apple chutney? does this work with eating apples? guess you could just add less sugar?

Baked cinnamon apples

Ingredients

8 tsp. unsalted butter, room temperature
2 tbs. raw, brown sugar
8 red apples, washed and cored
8 cinnamon sticks
Directions

Preheat oven to 350º.
Beat the sugar and butter together in a small bowl, until the mixutre is fluffy.
Put a teaspoonful of the butter sugar into the middle of each apple. Then, add a cinnamon stick to the center of each apple.
Place apples in a glass baking dish.
Bake for 25 minutes, until the apples soften.

Serve warm.

1 sheet of Jusrol Puff pastry

Open the sheet and place on non stick baking parchment

Slice apples and do a fat srtip of them down the middle.

Add some sultanas (soaked with a teabag in the water - it makes them go plump and extra tasty)

Sprinkle with sugar and some honey then fold the two sides together.

Bake in the oven for about 30 minutes. 180 is good but my oven is a bit weird so follow the premade pastry packet instructions for oven temp and times.

When it is almost ready, pour several spoonfuls of apricot jam on top of the pastry and turn the oven off. Leave the apple puff in for 5 mins and remove from oven.
Dust with icing sugar and it is best with a big dollop of creme frais.

Are you not storing any? we are trying...it may not work though...

Have also made apple chutney and apple and blackberry jam with ours - have also got a recipe somewhere for apple and blackberry leather if you're interested.

How do you dry apples? I've seen them sliced thinly in health food shops but have never had much success trying it at home.

You have to slice them thinly and then put them in a very low oven for a very long time dont you?
