Does anyone have a recipe for a FLUFFY cheesecake??

I am on a mission to be able to make fluffy cheesecakes rather than the more solid baked kind.

Can anyone help?? Almost mousse like I think but not actually mousse!

oooh yes you want an unbaked cheesecake, using wipped cream and cream cheese and lemon juice and icing sugar.

No idea where I've put my mum's recipe, but it's awesome. Basically a tub of Philadelphia, similar quantity of cream and sugar (she just uses caster I think), all whizzed up with the juice and zest of a lemon or two depending on how tangy you like it. You also need a bit of gelatine too, you can experiment with the quantity until you get the set texture you like.

Never made a strawberry one, but presumably you could use strawberry coulis (sieved strawberries with some icing sugar to taste) in place of the lemon juice?

Base is most of a packet of digestive biscuits bashed up and mixed with melted butter, or ginger nuts make a lovely alternative.

Must make one. Now. Drooool.

Like Monarch said but I never bother with gelatine or expensive philadelphia, I use normal cream cheese, I'd say two tubs, and half a pto of wipping cream, and castor or icing sugar to taste and the juice and zest of a lemon.

I would add the strawberries on top if fresh, or make a strawberry coulis of frozen (thickened with a little corn flour, like a lemon curd)

I have never followed a recipe with exact quantities, but I recommend you do a google search for recipes to get the quantities right.

The fruit should always be on top, as a seperate layer, not mixed into the cheesemix, for an unbaked cheesecake.
