Lactose free fillings for baked potatoes

Help! What can I serve as a choice of fillings for baked potatoes for someone who's lactose intolerant?

I don't have time to make chilli and I don't want to serve baked beans. All I can come up with is salsa, guacamole or houmos (all dairy free, right?). Everything I'd normally have has mayo or cheese in it!

Hellmans mayo doesn't have any dairy in it

FiveGoMadInDorset · 29/09/2010 20:57

Does mayo have dairy in it? Didn't think it did, if not I do a chicken, avaocado, walnut and apple mixture and have a salad on the side.

Sardines in tom sauce - mushed up

Is she ok with eggs though? Check with her... (mayo has eggs)

PrettyFeckinVacant · 29/09/2010 21:41

Just pointing out that Chicken Tikka will have dairy products in it - sorry, flossie!

My DD is allergic to dairy and eggs and she cant have shop bought chicken tikka - the chicken is usually marinated in a mixture containing yoghurt.

I really struggle with jacket potato fillings with no dairy or egg!

flossie64 · 29/09/2010 21:49

I make my tikka with coconut milk/cream instead of yoghurt. would that work PFV ?

PrettyFeckinVacant · 29/09/2010 22:04

Ooh, that sounds good flossie. I do make a Thai type curry for the DC which DD2 can have, with coconut milk in Smile

MaudOHara · 30/09/2010 11:35

Just check the labels on some reduced fat mayo - they often use yogurt / creme fraiche

HairyMaclary · 30/09/2010 11:37

Some coleslaw is only made with mayo, the waitrose 'creamy' is one - not the Deli type though.

ppeatfruit · 03/10/2010 11:52

I often make dressings with tahini and pnut butter, you just add lemon juice, soya sauce a little water and olive oil and garlic to taste.

Chilli con carne

Anything bound by egg mayo (long as she fine with eggs) - so coleslaw, tuna, egg...

if no eggs as well: tuna flakes with a bit of oil and sweetcorn, chickpea salad, baked beans, hummus, guacamole as long as no yoghurt or cream it it, ham and onion, soya cheese, peanut butter (it is nice, really!), bacon and leek, coconut based curry, corned beef...
