Can you freeze chicken stock twice?!

Probably a silly question but here goes:

I made and froze a load of chicken stock (now in ice cubes in the freezer). Can I use it to make a recipe and then freeze what I've made in ice cubes? So the chicken stock will be frozen twice! Is that ok?

hmmm - not 100% sure, but my take on it would be that whilst I wouldn't defrost and then re-freeze the stock without cooking it first, as long as whatever you are making with the stock involves boiling it back up again before re-freezing, then you should be ok.

The reason you can't normally re-freeze defrosted stuff is because the bacteria multiply much quicker once it has been defrosted, but boiling again should kill them off.

It's only like making bolognaise from frozen mince and then refreezing it, isn't it? I do that all the time.

Thanks for replying...hmmm, I agree with all of you! It's probably ok to freeze again but I'm not going to take the risk!!!

The general rule for freezing meat (especially poultry) is freeze once raw, once cooked.

The same applies to the cooking/heating - cook once, reheat once.

Making bolognaise from frozen raw meat and then freezing the cooked product is fine, but chicken stock is already cooked so freezing - defrosting - freezing isn't advisable.
