I have cooking chorizo. What shall I make with it?

Got loads of store cupboard stuff and I feel like I need to cook my way out of this hangover.

I bought it thinking I'd make the chorizo and chickpea stew in Nigella's new book, but reading it more closely, I don't quite fancy it now - I didn't realise it was full of bulghar wheat.

Yes just cook it for the time that the rice needs if you know what I mean.....

Indaba · 26/09/2010 11:11

broad beans....sounds disgusting but delicious......very typical northerns spanish dish....steam the broad beans till nearly done at same time slowly gently fry the chorizo in its own oil for a few mins.....add them together....eat.....fab!

Indaba · 26/09/2010 11:12

DH makes a mean chorizo and mushroom omelette too

Dumbledorina · 26/09/2010 11:12

Chorizo is great in a pork casserole with olives, tomatoes and smoked paprika - a regular dish in our house. Also jazzes up a spanish omlette. Alternatively a good alternative to bacon when making a tomoto based pasta sauce.

DontMentionChorizo · 26/09/2010 12:35

Ahem Hmm Grin

Igglybuff · 26/09/2010 12:40

You can make a chorizo and chickpea stew without the bulgar. We've done it - a Nigel Slater recipe.

Also chorizo risotto is nice.

One of our favouites is an adaption of brazilian fejoida. If you can get hold of a tin of black beans that is the easiest thing to use. Its really quick. Fry an onion and garlic, then add the chorizo (cut into chunks) then add the tin of blackbeans and half a cup of water. Bring to the boil then simmer for 20 minutes. Its great with rice and some fried spinach. Black beans are really healthy too!:)

Jamie's jambalaya recipe is gorgeous

anonymousbird · 27/09/2010 13:30

Fritatta.
Yum.
Spice up a sausage casserole?

I have even chopped it small and added to baked beans for kids to have baked beans on toast. Don't need much, but makes it a lot more interesting.

Pasta?
Mixed with diced potatoes and sauted? The gorgeous orange oil of the chorizo gives the sautes a really lovely tang. Sorry, no recipes, but hopefully the general idea is clear.

Loving the sound of risotto/jambalaya stuff.

IMoveTheStars · 27/09/2010 13:38

delia's jambalaya

Ilove this, and it uses basmati too. Follow all the steps properly though (cooking the meat separately etc) or it'll go wrong.

bloody gorgeous though.

For tea I'm having chorizo, rocket and mushroom pasta with a tomato & oregano sauce. Nom.

LowLevelWhiingeing · 27/09/2010 19:30

Thanks for suggestions. I have to admit, I found the jambalaya recipes quite scary, I think because I don't believe I can cook rice without draining it at the end, i.e. cooking it with exactly the right quantity of water so that it absorbs perfectly!

Maybe I'll have to give it a go and test myself.

Chrizo cooked in red wine, with some crusty bread. DELICIOUS.

Or jaime's recipe for soup with spinach and chorizo and chickpeas and boiled egg. Sounds disgusting, looks like swamp water, tastes divine.

Thanks for some of these recipes, we have some chorizo in our fridge been there about three months, better use it soon.

LowLevelWhiingeing · 27/09/2010 19:41

stranded, do you just literally cook the chorizon in red wine? Or is it a casserole type dish?

OP posts:
strandedatsea · 27/09/2010 19:44

just cook it in the wine, hold on a moment...fry it in olive oil, one minute, add red wine, cook 5 mins, serve.

LowLevelWhiingeing · 27/09/2010 19:46

well, that sounds manageable!

Spanish chicken recipe from resourceful cook.com is nice - chicken thighs, black olives, chorizo stew

nancydrewrocked · 28/09/2010 21:02

Chorizo red wine and potato stwe (think it is a Nigella recipe) but is literally only those three ingredients + onion and garlic in a big pot.

Serve with crusty bread mmmmm

skinnymalinki · 28/09/2010 21:03

Chopped up chorizo with roast potatoes and roast chicken mmmm,

thereistheball · 29/09/2010 12:08

We add cooking chorizo to a Waitrose sweet potato and savoy cabbage hash recipe. Or eat it in a chickpea, red onion and tomato stew or salad. Or I sometimes do a slow-cooked stew version of the Pieminster Matador Pie made of beef, chorizo, sherry, green olives and butter beans.
