Any ideas for "grab out of the freezer and eat when defrosted without cooking" lunches

Both meat and vegi.
Preferably something with some vegetables, my ideal lunch is a cheese salad sandwich, but not really very freezable!
I'm thinking of things like onion bhajis, quiche...maybe the odd sandwich?

would grated carrot freeze do you think?

I really can't think of anything which would be appetising after defrosting without cooking.

Milk?

Not even something like a quiche or onion bhaji? or if we're feeling desperate, a slice of pizza?

there was a thread ageees ago on moneysavingexpert.com forum about sarnie filings that meant you could freeze the sandwiches in advance. It might be worth having a look in the Thrift and old style saving board.

Thank you! I might come back and ask you about that as I'm a MSE novice :)
I did google but seemed to get loads of american sites talking about peanut butter and jelly Hmm and weird rolling up of sandwiches! I just want some decent lunch-y food that I can freeze and eat cold.
Actually I have thought of one - lentil loaf. Problem is that goes best with salad :(

Pasties? I make beef and onion pasties to freeze for lunches. DH heats his up but I prefer them unheated. You could do all sorts of fillings.

I have been thinking about this for the last two hours and have come up with.... Gazpacho! Tadah!

StealthPolarBear · 24/09/2010 21:33

Cheese and spinach sounds nice. Make it feta and you've got Greek-Cornish spanakopita fusion pasties!

Perhaps some nice spicy vegetable filling? There's a recipe for (I think) cheese, potato and onion pasties in Domestic Goddess, which are very nice.

Chicken and veg, salmon and broc....I suppose anything that you would quiche you can also pasty!

StealthPolarBear · 24/09/2010 21:40

mmm that all sounds lovely. I love feta. Will come back to this when I'm doing my shopping list

Meat pie, broccoli quiche, cooked sausages.

Sandwiches (without salad) freeze ok. We had a party recently and had loads of leftover M and S sarnies still in their packets, so we froze them. They were perfectly fine after defrosting, apart from the lettuce which did go a bit soggy.

I make 'pizza swirls' for DC's lunchbox, that I take out the freezer (individually wrapped in clingfilm)and are ready to eat cold at lunchtime. They love them. Make bread dough in breadmaker (or use one of those packet ones) roll out into a huge rectangle, spread with tom puree, sprinkle with cheese, ham, olives etc. Roll into a swiss roll shape then cut into 12 rolls, leave to rest for half an hour or so somewhere warm then bake for 30 or so mins until cooked. When cool, wrap individually then freeze. Hope this helps.
