Buffet-type pud idea needed fast!

Hello

Just found out I've got to cook a pudding for a buffet-style meal tomorrow.

Any ideas?? Something in a big bowl that people can just spoon out/come back for more (don't want to run out of pudding!).

Will have fruit salad as well, so something less virtuous possibly... :o

Cheat's trifle? Slice up a rectangular madeira sponge cake, put strawberries/raspberries on top, big pot of ready-made custard, whipped cream and crumbled Flake on the top. You can splash sherry onto sponge if it's adults only.

I have made this cheesecake before and it was remarkably easy and very yummy.

I also love Nigellas Anglo Italian Trifle - the limoncello whisked into the mascarpone makes it like a lemon mouse on the top - absolutely gorgeous - but better for adults Smile

Well, cheesecake sounds great, and that trifle with the winter fruit looks A M A Z I N G but apparently local shop has no cream cheese at all :)

Was thinking of making an eton mess type thing (thanks for suggestion!) with some blackberries. Can pick the fresh in the morning, then do you think it would be ok to cook them for a few minutes in water? or orange juice? and sugar? to make them all juicy and yummy?

Then whip cream with a little icing sugar and fold the fruit/meringues in.

Will this be nice really, I'm imagining a kind of blackberry ripple effect? Or will it just be a horrible mess? :o

I make a lovely, really easy (cheats) chocolate trifle:

Base - some kind of sponge cake. You can buy a chocolate marble cake, or a chocolate swiss roll - anything like this. Slice it up and put a tight layer on the bottom of your trifle bowl.

Drizzle/soak (according to preference!) with alcohol - sherry, brandy, Tia Maria, Baileys - whatever you have to hand.

Then you need to top with custard.

Buy two cartons of ready made custard. Into one of them melt some milk/plain chocolate (whichever you prefer); into the other, melt some white chocolate.

Pour one custard onto the sponge, and then the next.

You could also mix in some chocolate polka dots.

Whisk up some double cream till slightly thickened, pour over the top.

Get a Cadbury's Flake. Still in the packet bash it with a rolling pin to break it up/crush it, then sprinkle all over the top of the cream.

If you have to, you can put some fruit into it. I would suggest something like tinned black cherries, as these work very well with chocolate.

OH MY GOD BIWI that sounds amazing. I am saving that recipe for my dad's birthday in a couple of weeks. He is a sucker for custard and chocolate of any kind. My only worry if I combine the two is that he might actually explode with delight. :o

When you say "some" chocolate - roughly how much?

Oh who knows. I am very vague re quantities. Just what seems to be right/tastes good!

Buy more than you think you need, and just add enough till it tastes of chocolate rather than custard.

You can never have enough chocolate, IMO.

It's a cheat's trifle, so just do what works best for you!

I think the blackberries would be good like you were thinking of, but tbh I would just put them in a bowl with some icing sugar on them and leave for a few hours, they then go a bit more liquidy and perfect for folding through cream. :)

Choc trifle sounds good, as for fruit, my vote would be for raspberries and drizzling/soaking with Cointreau.

I've made a gorgeous choc cake with equal qunatities of plain flour, sugar, eggs, butter and plain choc, but increasing the baking powder to 1 tsp per egg. I then make a sort of truffle mizture with a 250g block of melted plain choc whisked with a splash of cream until it's paler, a sort of milk choc colout.

I then assemble as choc cake, truffle layer containing Cointreau soaked raspberries, whipped cream, then choc cake. I use one of those rectangular tins that have pins at the corner for unmoulding. IF I feel like it, it then gets covered with icing made from 150g plain choc and 65g butter melted and mixed. This is then poured over as is, or whipped and spread.

It's become a sort of favourite grown up birthday cake. It does freeze, but normally gets eaten before there is a chance.
