Question about Nigel Slater Brownies

I read some reviews of this recipe and some testers said they halved the sugar or they are too sweet. Has anyone tried this?

Also, can you cut them into quite small squares. I want to put bite size pieces in paper cases for a party? Or will they crumble?

I have never cut the sugar amount so can't help you with that.

What I can comment on is the density of this particular brownie, its very fudge like, so not crumbly at all. Its actually impossible to cut at all unless it is very well refrigerated.

I wasn't keen on the texture, and they took much longer to cook.

I prefer a cakier brownie.

I found a recipe on here for rolo brownies which was much nicer.

I didn't find them too sweet.

I loved the fudgy texture but did find they needed a bit more cooking than he said. I would cook in two smaller tins if you have them, rather than one big one so they cook a bit quicker.

Also cover top with a piece of tinfoil after 15 mins or so to avoid the top getting over-cooked.

Definitely refrigerate before cutting - I was too impatient and made a wee bit of a mess of mine!
