Best curry cook book?

I consider myself to be a decent cook but I seem to have a block when it comes to cooking curries (and Chinese food FWIW). I never seem to get the spices right, or it is too watery etc etc. Can anyone recommend a foolproof basic Indian cook book which might include (whispers) a recipe for Chicken Rogan Josh as good as my local takeaway...?

If you want takeaway/Indian restaurant curry, then IMO you can't beat this one. Be warned, it tells you exactly how much veg oil is used but the results taste like you would get in a restaurant. I think it's the base sauce method that does it. I'm sure it has rogan josh too.

Madhur Jaffrey's Indian Cookery is fantastic. Has a recipe for rogan josh in it, but it's for lamb or beef (although no reason you couldn't substitute chicken). Bombay Brasserie cookbook (Udit Sarkhel) is also good but tends to have more fiddly, time-consuming recipes.

Not a whole book, but the Chicken Tikka Masala from Jamie's Dinners (Oliver obviously) is great. I cook it all the time, absolutely delicious, and really easy. I'm not keen on hot food, so just leave out the chilli, but either way is fine.

I have the flipcook Curries of the world by Mridula Baljekar. Its out of print now but I'm sure any of her other books are good.

The Rogan Josh (Indian Food made Easy) by Anjum Ananad is very good too.
My DH didn't like it as he said it wasn't very authentic. IME it is i.e. not like a take-away though (healthierGrin).

Also try adding cornflour at the end to thicken- I do this when making chinese,

Curries of India by Camellia Panjabi - she used to own the Bombay brasserie in London.

Fantastic curry recipes, and full of really useful tips, it is my bible (I cook curry several times a week).

An Indian Housewifes Recipe Book by Laxmi Khurana.. personally i can`t stand curry but my DH loves it and he said these recipes are better than a curry house.

I am another Madhur Jaffrey fan and I also like Anjum Anand's rogan josh recipe.

I love curries.

It has got to the point though where DP and DD moan if I suggest ordering an Indian takeaway, as they say the curries i make are better than the Indian restaurant.

I have ordered 'The Curry Secret' after reading this thread, it arrived this morning. Smile

I am going to try it out next week and will report back. One thing that suprised me is that none of the recipes use cocnut milk, but what do I know?! Grin
