What recipe could use a dry sponge cake?

I've made a bad victoria sponge, it's not burnt but dry (due to baby waking at just the wrong time Angry).

I think there must be a beautiful recipe requiring cake crumbs or pieces, other than trifle, but I'm buggered if I can think of one.

Can you wise ladies help?

I rather like sponge with tinned fruit and custard.

Queen of puddings ?

baked alaska?

ProfYaffle · 17/09/2010 13:43

Bread and butter pudding or pain perdu kind of thing?

ProfYaffle · 17/09/2010 13:44

(though a proper trifle with no jelly and home made custard would be lovely imho)

Trifle - soak sponge with amaretto (or whatever), cover with raspberries, cover that with vanilla custard, then top with whipped cream, then scatter crumbled amaretti (or whatever) biscuits on the top.

Thanks everyone, leaning towards a tiramisu or bread and butter pudding, but Cake Pops look fantastic.

Yes FortiesCromarty.

Cake Pops are fantastic and will take over cupcakes.

There are plenty of styles and recipes on google.

Let me know if you need some help.

Cheers,

omg i have never ever heard of cake pops before and i am smitten!

are they safe for little ones (sticks, mouths, that kind of thing)?

i want a recipe please

I've been researching cake pops as am making some for an event this weekend. If you look on youtube there are lots of different clips showing how to make them.

Although I love baking, I have cheated for mine and bought two madeira cakes from Sainsbo's ( on offer atm ) and also ssh some ready made Betty Crocker frosting. The lollipop sticks you can get online and I think I am going to cover with half melted white choc buttons mixed with pink food colouring and half milk chocolate with sugar balls.

They are as safe as lollipops, ie I wouldn't want them wandering around with one. TBH, I wouldn't want them wandering around with anything chocolate anyway.....

I make chocolate truffles with dry sponge. Blitz sponge cake in blender with tsp of vanilla essence, heaped dsp of cocoa powder and 2-4 tbsps of brandy if for adults or fresh OJ if for kids/all the family. (Only takes a few seconds.) When it turns into a dough, roll into little balls, roll them in cocoa powder then melt a slab of your favourite choc and dip them. Can be finished off with chopped nuts or icing sugar or candy sprinkles. They look out of this world and take about 10 mins to make.
