what do you do with stale bread?

the local ducks have started swimming fast away from us when we turn up, bread clutched sweatily in hand, toddler shrieking in anticipation.

And I'm fed up with bread and butter pudding.

We end up with at least half a loaf stale a week - no matter how we store it. It's even more heartbreaking when it's home made. There isn't really room to freeze it, and we all have sandwiches every day - so at least 2 loafs purchased or made a week, and several slices end up dry and inedible.

So, any ideas?

French toast for weekend breakfasts? Whizz up a few slices in the blender/foodprocessor to make breadcrumbs, and then use the breadcrumbs for coating food for frying/baking, making burgers, sprinkling on top of things for a crunchy topping when you bake them and so on? I do this and freeze bags of breadcrumbs, but if your freezer is full may not be possible. Or just buy or bake fewer or smaller loaves?

Whizzed stale tiger bread the food processor and used it in hm meatloaf this week.

we're buying pretty standard sized loaves - the smaller ones don't do us 2 days really, so pretty pointless, the larger ones don't last long enough for us to finish them!
will look into french toast, and we already have plenty of breadcrumbs in the freezer - got a lovely kenwood on the product trial here and was testing it :o

What about panzanella? Toast the bread, rub it with half a clove of garlic, cube it.
Then mix it with chopped cherry tomatoes, chopped peppers, basil (or fav herb), lots of olive oil and balsamic vinegar.

If you want you can add protein (mozzarella, tuna, grilled halloumi) and make it into a full meal!

Toasted stale bread rubbed with garlic and olvie oil also makes a good base for bruschetta

make a bread and butter pudding but with CHEESE instead of sugar and fruit etc. Yum. It goes a bit like a weirdy souffle. Serve with green things

Just remembered another one - if it's brown bread, brown bread icecream is yummy. Far too long since I've done that one....

And home made croutons can be nice.

i make it into breadcrumbs in the blender then freeze it in small bags. if it's bagged, it takes up much less space in the freezer and can be shoved in between bigger stuff.

Almost invariably I make it into breadcrumbs in the food processor and then freeze or use in something straight away.

Otherwise, I use it for toasting or frying for croutons! Smile
