What food to take on a self-catering holiday

Me and DP and going to Scotland for a long weekend in a couple of weeks. We're staying somewhere very remote so won't be able to pop to the shops easily. This will be difficult for us as we currently live 100 metres from a supermarket so never really plan our meals.

I'm also trying to lose weight so need to stick to healthy eating. We'll be eating out most nights, but does anyone have any suggestions for nice breakfasts and lunches that can be prepared without much cooking equipment or too much fuss?

Porridge oats would be perfect as we'll need energy for long walks and it's going to be freezing.

eggs- can be used for breakfast or omelette in evening if you've had a big lunch

When we go self catering I do pasta one night-adding bacon/mushrooms/cheese if we have them

Risotto only uses one pan and is healthy- if you are in Scotland you may be able to get some lovely smoked salmon to make one.

Ditto paella

Could you make something now- eg a fish/shepherds pie or a lasagne and freeze it then take it with you?

Thanks for the suggestions notasize10.

We're having a stopover in Manchester the night before as we're driving up from London, so it means we can't bring anything from home that needs refrigerating.

The bacon and mushroom pasta sounds good as I could use the bacon and mushrooms for breakfast if we end up eating out for lunches.

Risotto good as I can take the rice back home with me if we don't eat it. I could take a couple of stock cubes with me.
