Aubergine/Eggplant Recipe anyone?

Hi,
I have my best friend coming from Australia to visit and she is a big Aubergine/Eggplant lover. I tried many recipes so far, but didn't find the one yet. Can you share your recipes for Aubergine/Eggplant with me?

Slice them thinly and roast in olive oil for 20 mins. Fry an onion and some crushed garlic and add two cans of tomatoes and simmer for 10 min. Layer the aubergines in a dish with the tomato mixture, mozzarella grated Parmesan and basil. Top with more Parmesan and bake for 20 mins in oven.

I found a nice recipe for "eggplant with minced meat from the oven" on www.smarttips.ca/index_Eggplant. They also recommend salting the eggplant in order to get rid of the sourness. I tried the recipe and it was a success in my family!

Mrspickles: unfortunatelly I don't have a slow cooker yet - so as soon as I get one I will try your recipe.

I did this on the weekend:

Roast chunks of aubergine in some olive oil with a little cardomom for about 30 - 45 minutes until they are soft and starting to look brown.

While they're cooking, mix equal amounts tahini and greek yoghurt (to taste ie if you LOVE tahini, go higher on that). Pour in some olive oil and mix well so that it's still thick, but runny. Add lemoon juice to taste.

Once aubergines are done, stir the sauce through them and serve still hot. You can add some toasted pine nuts of some sesame seeds too.

The recipe I used recommended this as either a main course recipe with rice, or as a side dish. It was delicious.

I wonder (I shouldn't) but do you know how much calories would a portion of this dish have?

Do not think about it. Tahini is basically sesame oil so I imagine it's high in calories as most nuts and seeds are.

On the plus side, it's good calories, rather than bad.

You could definitely reduce the ration of tahini to yoghurt to make it a bet less calorific.

Pasta a la Norma is very tasty, I gorged on it when I was in Sicily. If you have a copy of Jamie's Italian book, there's a recipe in there. If not, you should be able to google it.

This Delia recipe for Tunisian Aubergine salad is fantastic.

Especially good if you have a friend coming as it's best made 24-48hrs in advance, means you're not stuck in the kitchen when she's here.

I love as is with pitta etc or as a side dish with grilled fish, chicken, halloumi if veggie.
