I need some help to avert a possible chutney disaster!

This si my first time doing a chutney. I have followed Delia's recipe for damson chutney only replacing it with other plums. Has now been cooking for 3.5 hours and there is still quite a lot of liquid. I forgot to stir it for a while, and there is a bit stuck to the bottom. Have I burnt it? What should I do?

Give it a good stir and turn it up a bit. Keep stiring every now and again too

Well, I eventually got it into jars after having simmered for ages to get the liquid out! Apparently I'm supoosed to let it mature for 3 months so I won't even know if it was worth all the bother until nearly Christams! Thanks for asking though!!

Well done for doing it! I bet it will be fantastic by Christmas. Are you giving it away as presents? I always intend to make plum chutney in Sept when they are plentiful and cheap,but then don't get round to it until the plums are all finished. I wouldn't worry about the bit sticking - mine usually sticks a bit, and always takes longer than the recipe says.

Enjoy the satisfaction of looking at the jars on the shelves and feeling smug!

I am slightly worried that it smelled very strongly of spice. Is this normal when making a chutney? I had to adapt the recipe a bit, so I'm worried I might have over done it!
