Stick them in a baking dish, drizzle lots of oil on them, add garlic, seasoning and basil, and put them in the oven for 2?3 hours on a very low heat (checking occasionally that they're not browning too much). Squish them through a sieve and freeze to use in pasta sauces later on. Yum.

If you have the time and/or inclination, last week I made this fresh tomato sauce and it was delicious. It does involve peeling and de-seeding though.

Alternatively I'd say a lovely fresh tomato salad with a balsamic dressing and some basil.

Tomatoes on toast for breakfast. With a bit of garlic (yes, garlic for breakfast!), mint and olive oil. The summer breakfast.

I'm roasting tomatoes in my oven as I type.They've been in for 3 hours already and aren't done yet.I don't know if I dare leave them in overnight,so might restart again tomorrow.

I was going to start a thread asking what I could do with all my home grown toms and saw this one for slow roasting.

mrs mine are just in the oven too as I type.
The rosemary and thyme is from my garden too and my mouth is watering at the thought.

Hi OmicronPersei8 - They turned out really well!
I had to put my oven on auto to switch off as it was done late at night.

I had 2 trays of them. Kept half a tray in the fridge to use up fresh, ate the other half(!) for breakfast) and froze the rest.
Lovely flavours and the garlic sweet.
I think I used a bit too much oil, as the toms are juicy anyway.
