Need a good cake recipe

I am looking for a recipe for a cake that will feed a family of four for a few days (or longer) and is reasonably healthy

I have two kids that eat constantly! I am running out of ideas for snacks/pudding that is cheap and healthy

Carrot cake/banana loaf that kind of thing?

I like the 'all bran cake'...

1 cup of sugar
1 cup of All bran cereal
1 cup of mixed fruit or raisins
1 cup of milk warmed
1 egg
1 cup of flour

mix the sugar, cereal, dried fruit in a bowl. add the warmed milk and leave to soak (either over night or until it starts to look mushy)

Once soaked add the egg and flour.

Put in to a well greased loaf tin (there's no fat in this cake) and bake at 180c for about 20 mins or until a skewer comes out clean from the middle of the cake.

OK, so it's a lot tastier than it sounds- sort of like a malt/fruit loaf.

Banana flapjack (accidental invention when had a packet of overripe bananas)
Take standard flapjack recipe. Add 2 mashed bananas, leave out the sugar and add large handful(s) of whatever dried fruit comes to hand (chop it if its larger than sultanas).
Same banana overload also resulted in: banana muesli muffins (again, no sugar), banana and cream cheese pancakes (which are scotch pancakes really and my DD likes to eat them cold...) and banana and date loaf. If you're interested, I'll try and reconstruct the recipes (sort of made them up as I went along....)
I cook cakes in large batches and freeze in small slices, so there's always something to feed the hungry monsters

200g plain flour
Actually Nigella Lawson's Coca Cola cake but it's wonderful - incredibly easy to make (great for toddlers), tastes wonderful and very moist and they stay fresh forever (I assume because of all the nasty preservatives in the cake!)

250g golden caster sugar
Half tsp bicarbonate of soca
quarter tsp salt
l Large egg
30g yoghurt
100ml semi-skimmed milk
1 tsp vanilla extract
125g unsalted butter
2 Tablespoons cocoa.
175ml Coca Cola

Mix flour, sugar, bicarb and salt. Beat the egg, milk, yoghurt and vanilla in a jug. Melt butter, cocoa and coca cola in a heavy based pan, heating it gently. Pour this mix into the dry ingredients, stir well with a wooden spoon, and then add the liquid ingredients from the jug. Beat until well blended.

Makes 12 cupcakes, bake for about 15 minutes.

I make a lovely cherry and almond cake. Keeps well.
