Recipes with PROTEIN for a veggie toddler

My 17month old will not eat tofu.

He will not eat quorn mince.

It's probably my fault as I don't usually use meat substitutes and have only tried introducing them recently.

He will have a few bites of a veggie sausage although I don't like to offer those as they are so high in salt...
He DOES eat cheese and eggs but this leaves us a little limited (and as we all eat the same food, makes me worried about my ass waistline.

In general he is a fantastic eater (lots of fruit and veg, pasta, wholemeal bread etc etc) but this is frustrating!

nuts? will he eat a nut loaf? or peanut butter?
i add PB to stews and things lol

also any beans or pulses

Lentils, any pulses/beans. We're not totally veggie but as an ex-veggie I still cook most meals without mean. DD is 20 months and loves pulses, likes to pick kidney beans out of soup one by one...

How about pinenuts or walnuts in pasta, cashew nuts in stirfries. I think it's disgusting, but ds2 likes jam and peanut butter sandwiches- you can get salt free nut butters I think.
My lot like the sausages that you make up from a packet with water-they can roll them out into sausage shapes themselves and I think frying them helps immensely with the flavour!
Quiche is a good way of getting lots of calories into them.

My DD is going through a horribly fussy phase but can always be tempted by houmous, mild lentil dahl, scrambly eggs or fritatta.

She will eat Quorn though, but not tofu or the dried TVP. Which suits me.

Have you tried him on the Quorn chicken style pieces? In chunks or fillets?

thanks for all the replies-lots of ideas.

I hadn't remembered about nuts Blush but offered rice cake with peanut butter at breakfast and it went down really well, so I will offer peanut butter sandwiches etc now.

He doesn't like falafel (unbelievable!)or hummus.

I will definitely keep trying with tofu (again I think it's sacrilege not to like it!)

I can try a nut loaf/stuffing type thing with veg AND lentils etc "roast dinner style"(as psoposed on another thread)

I've got quinoa on my shopping list-years since I've eaten it but I suspect the texture will not be one he will be keen on, going from the quorn mince/boiled rice/green lentils experiences so far...

applehead please let me know your recipe? I bake a lot and put a lot of ground nuts in banana loaf/plum cake etc so I like the idea.

defineme what are those sausages roll yourself you mentioned?

actually, i make a "cheese"cake with silken tofu which always goes down well. even with non-vegans lol

My two love chick pea stew with quinoa stirred in at the end and topped with cheese

Green/Puy lentils cooked with some chopped veg (onion, mushroom, pepper) and served with fried Halloumi cheese also goes down well.

I also make a nice mushroom roast - think along the lines of a nut roast, but mushrooms instead (or sometimes both)

When all else fails baked beans on wholemeal toast with grated cheese is a winning combination

oh yes he loves baked beans (I give those reduced salt/sugar ones)but I've had no joy with chickpeas. He has eaten about 5 kidney beans between today and yesterday, so that's a start.

Mushrooms roast-a GREAT idea and tofu cheesecake-you have me planning to do a trip to the vegan cafe nearby for "coffee" (cough) tomorrow!

Just thought of another my two wolf down, and it is a 'quickie' meal (so double bonus!). Cook pasta (usually shell like conchigle) and just before it is done throw in a tin of canellini beans. Once cooked drain and in empty pan warm a tub of creme fraiche and a good dollop of pesto (usually roast aubergine, but any of the nice flavour ones will do). Mix everything together and serve with grated parmesan. Job done.

I buy mine from asda-it's an asda own brand soya sausage mix -they do a burger one and a nut roast one-all in packets near the dried pasta I think! Health food shops stock similar things.
