... left over from a recipe. Need to use it today, what delicious things can I make with it?

Make a sauce with tinned toms or pasata, plus any veg your have. When it's cooked, puree the sauce, then stir in the marscapone for a yummy creamy sauce for pasta

Even my ultra-fussy three year old loves this.

I always use mine for a cake filling, such as a vic sponge, jam one side and marscapone the other. it is delicious and beats cream or butter icing anyday.

ooh nice ideas, although am a bit off tomato at the moment due to recent glut from my dad's allotment. Brilliant idea re victoria sponge, saving that in the top tips corner of my brain for future ref Smile

what about something with chicken? or alternatively can I do something wonderful with chocolate?

Jamie Oliver does a lovely pasta recipe which I add chicken to (for carnivore DH).

Put pasta on to cook. Sweat 3 cloves of finely sliced garlic in a little bit of butter (in a big saucepan), add a whole bag of spinach and cook until the spinach has wilted. Season and add a bit of nutmeg. Add in the mascarpone, two ladles of pasta water and about 3 sliced raw chicken breasts (can add in a bit of cream too if you have it) Leave to cook for the last five minutes, then add two handfuls of parmesan. Drain pasta and add to sauce.

Even 7mo DS eats this!

(this is my thrifty comfort eating recipe so can't guarantee it's that great)

I fry up some garlic and chopped tomatoes in a mix of butter and olive oil then dollop in the mascarpone and stir it gently so it melts in. Sometimes I add a splash of white wine too, just don't let it get too runny.

I serve it will pasta mixed in with broccoli and parmesan and basil on top. Just a big old portion of creamy carbs really Smile.
