Want to make healthy meals and freeze for dd for when I'm in a rush, ideas please?

Thats it really, I currently make annabel karmel's chicken pie and fish pie, as I can make a large batch, freeze and quickly reheat when I am in a rush.

Any similar ideas? As I'm starting a new job and hate giving dd food that is not healthy. Smile

How old is she? DD is 13 months and when I can be arsed batch cook things like spag bol, shepherds pie, very mild curries which she loves, chicken/beef/lamb casseroles.

It's basically all the stuff that I have, I just don't add any extra salt.

Don't bother with baby sized portions in little ice cube trays, make a big batch and it'll do the family to save you rushing about cooking separate things when you get home :)

Definately bolegnaise sauce, or any other sauce/stew that you eat with pasta or jacket spuds - such as chilli.

Good advice by Shewillbeloved. I also tend to freeze a family meal but then on the occasions that we were having something the youngest wouldn't eat/like then I'd have a few portions of leftover stew in individual ziplocks.

The thing I found most helpful was to freeze individual portions of cooked veg, so all I had to think about was some protein - fish finger / scrambled egg / parmesan chicken - and the rest was 30 secs in the microwave.

(Parmesan chicken is just strips of chicken breast, dipped in egg then a mixture of flour and parmesan cheese. You can fry them or grill them. Delicious)

I make big batches of basic tomato sauce (onion, sometimes garlic, tinned toms, pepper, basil), sometimes blitzed, sometimes not. Freeze in icecube trays and you have the basis of a more or less instant meal all the time.

  • add a tsp of Philadelphia (or few cubes of homemade cheese sauce also frozen) for a creamy tom sauce
  • add to pasta (can freeze filled fresh pasta and cook from frozen), rice etc
  • serve on the side of things like PPs parmesan chicken, fishcakes etc
  • homemade fishcakes (DD loves them with sweet or normal potato, tuna, salmon, spring onions or normal onions, parsley etc)
  • make batches of bolognese sauce then freeze variations as meals eg pasta bolognese, shepherds pie, add lentils/beans etc
  • sweetcorn pancakes (like this Bill Granger recipe are dead easy to make, freeze v well and cook from frozen in a couple of mins (just do in a nonstick pan)
  • soups, stews etc
